Guinness Braised Cumin Beef Short Ribs

We woke up to a grey, misty, drizzly Wednesday morning. We are in mid-august and currently experiencing the dying embers of the cold season and boy it’s kicking out butt!! We are now going to cosy up to the weather and enjoy all things comforting! We are going to enjoy some dawa as we go through our work day! We are going to prepare some rich and creamy coconut milk and peanut sauce matoke for some hearty, delicious lunch. And all through the weekend, we are going to enjoy my guinness braised cumin beef short ribs!! I filmed this in May this year (I do all my content months in advance) and it has been such a joy enjoying it since then till today and I am certain you too shall thoroughly enjoy it too!!

I shall be taking a brief break until around October as I heal from a jaw fracture. Can’t wait to film new YouTube and blog content then. Dawa

A few things come close to how soothing a hot glass of dawa on a cold day is! Dawa means ‘Medicine’ in kiswahili. There are two variations of the dawa drink: the cocktail and the tea. Today we are making the tea. Dawa is commonly taken when one wants to soothe a sore throat, ease a cold and for most, just to warm themselves up and inject their body with a bucket load of vitamins. You don’t have to wait till you have a flu to enjoy this, you can just enjoy it anyday, anytime honey! Now that we are in August, the days are a lot milder, though the temparatures are still generally low (low by Kenyan standards at least lol) and the nights are cold and crisp. A perfect glassful of dawa would be perfect to warm you up not only this month but really any time of the year that you want something delicious, nutritious, warming and soothing. There are countless ways of making dawa, and today’s recipe is my take.

Pineapple & French Bean Egg Salad

We are now in the second half of 2020 and for most of us – judging from what I have observed from my socials- we are all hoping to catch a break bruv lol! For most of us 2020 has been difficult, and while we have adjusted to the new way life shall be this year henceforth, we are all yearning for a tiny glimmer of joy and stability. Hope it all plays out in our favor!

We kick off the first recipe of July 2020 with a bomb ass salad. I know I have said this time and time again, but allow me to repeat it once again today: The best salads in the universe are created in Kaluhi’s Kitchen! Cinnamon Ginger Pumpkin Bread

I have been working from home since 2015. While I have already found what works and what doesn’t for me, it has been quite a thrill to see everyone else find their own balance during this lock-down period. It has been exciting finally seeing people recognize that work done from home is still work. It has been amazing to see people realize and acknowledge & experience what my peers and I have been saying for ages: that working from home does not mean one is free all the time, but it means just that- work has to and is being done. It has been so great to welcome people into my world and to also help them get acquainted with striking the balance and establishing work boundaries especially when they can be so very easily be blurred while working from home. Besides helping people learn the ropes on WFH, I have also found immense joy in the increase in people trying out my recipes! With the lock-down and people reacquitting themselves with home cooking, I have seen you guys blossom into the most glorious home cooks! The banana bread craze came and died down, and I am happy my recipe too was among your favorites to have!

Things are slowly opening up, but the baking does not stop! As we ring in the cold season in Kenya, let us have something warm baking in our kitchens! You will totally love my cinnamon and ginger pumpkin bread!

Muhogo wa Nazi

The temperature has been steadily falling. That only means one thing: get a bae and spend the rest of the cold season in a permanent cuddle until sunny September it means we now have a chance to enjoy and savor all the beautiful indulgent, warming foods we can get our hands on. Make those soups, snuggle up to a plate of chicken biryani, let that matumbo na ugali really warm you up!!! Food is comfort and to that, we shall be adding another gorgeous recipe to the mix and that is my muhogo wa nazi.

Growing up, I never used to like muhogo (cassava) but lets thank the gods that with adulthood, I came to love and appreciate the beauty and versatility of this gorgeous, sustainable, complex-carbohydrate root vegetable. We made this delicious spicy muhogo back in 2016, and today let us introduce a creamy, silky one which is bound to become your favorite!

Three Herb Pumpkin Soup

The air smells like change. The past six months have been quite a wild ride – it feels almost as though we are living through a wild TV show with huge plot twists and random plot-holes lol. On the grander global scale, we are really living in unprecedented times. We are living in times where people are increasingly demanding for equality, as they should; and matters such as race, skin tone, nationality, tribe and class shouldn’t be determinants of how one should be treated. The Corona Virus is changing and shaping how we transact, interact and how communities show up to and for each other. We are watching in real time some countries come apart at their foundation, while others shine, take care of their citizens and take the lead (Hi Prime Minister Jacinta Ardern, I know you are reading my blog ily!). On an individual scale, many are turning inward and learning to do a lot for themselves and enjoying it- be it braid their own hair or finally learn how to bake- this global halt has allowed us to learn a thing or two or get reacquainted with a hobbies we used to enjoy but fell out of love with at one point or another. Change. There is so much beauty, terror and opportunity for expansion in change. I  hope you all are becoming and coming into the best versions of yourselves. The last half of the year imetukaranga, I hope the last half will be kinder to us!

Speaking of change, here in Nairobi, we have bid clear blue skies for grey ones. We are now transitioning into our cold season and best believe I have you sorted when it comes to the coziest, most comforting, most delicious soups! I have one for you today!

Iliki Banana Pancakes

The simplest foods are often the most comforting! I love how a biting into a mango feels like sunshine in my face. I love how creaminess of avocado and githeri feels like melty body butter on my skin. I love how labania za maziwa feel like a shower of forehead kisses. I love how chai masala feels like comfortable, familiar excitement. And I love how pancakes- specifically banana pancakes feel like staying in bed longer on a slow Sunday morning!

Banana pancakes are so simple to make, and are one of my favorite things to have. I always switch it up when I make mine, but my faaaaavorite way to enjoy them is with my favorite warm spice taking center stage- as iliki banana pancakes. You will fall in love with this one too!

Mahamri

Lamu remains one of my favorite places to visit in Kenya. This slow, sleepy and stunningly beautiful island is a place I love to escape to when I want to unwind and relax be it with company or alone. I was last in Lamu in 2017 and I have been planning to go back since. I miss the warm & genuinely kind people. I miss white sand in my toes during a dawn beach stroll. I miss watching sunset while sailing a dhow. I miss humid nights and falling asleep to the sound of waves crashing outside my window. I miss the billions of cats & donkeys that wonder on the narrow streets lol! I miss everything about Lamu and of course, I especially miss the food! We all know that Swahili cuisine is freaking amazing! Today I am particularly missing mahamri, and that is what we are going to make today and enjoy during this current Lock-Down period. But best believe, once this is all over and it is safe to travel, I can’t wait to have my braids smell like sea water again!

Chocolate Swiss Roll with Rum Whipped Cream Filling

My sisters’ and I usual snack during breaktime in Primary School was either a mandazi or a fruit or some biscuits with some juice. It was just a small snack 10 o’clock to keep us kinda full as we waited for lunch a little later at 12.45. We just carried whatever we could find at home, and we always had something to have- which was such a blessing. Once in a while, dad would buy us swiss rolls to carry for break and we loooooooved it so much. When Langata Uchumi Hyper was in it’s prime, their bakery was the world!! Literally everything they made was excellent! Don’t even get me started on their delicious power sandwiches *wipes excess drool*. Dad would bring the swiss roll log home and we would slice it and share among ourselves. It often didn’t make it to the next day, but when it did, it made snacking during breaktime so damn good!

For today, I am taking my childhood favorite and putting a twist of my own. Listen, you will fall head over heels in love with my chocolate swiss rolls with the richest rum whipped cream filling!

Curry & Coconut Cream Njahi

I totally get and respect the fact that we all like different things because we are different people. But aki you guys – especially my twitter family- huwa mnaongea mbaya sana juu ya njahi lol! It’s actually not many people who talk smack, it is just a few people who are loud about their dislike; so it seems like the whole world hates njahi. The likening of njahi to soil, to a mattress, to rocks, to sweat; are really hilarious to be honest, but it kinda breaks my heart too that some people are actually living life without having ever tasted delicious njahi. In my book, anything and everything can be made delicious. If you match up your ingredients well and play up on fresh herbs, anything -including njahi- can be tasty!

Ukwaju Juice

I love making my own juices at home. Not only is it waaaaaaaaaaaaaay cheaper, but also, unlike box juice, you get to control the amount of sugar you add and it is also preservative free. I love mango juice. I love the juice combo of mango and passion fruit. I loooove pineapple and mint. I love just passion fruit juice on it’s own. I love orange juice, though it making it freshly squeezed is quite the work out lol! Another one I love and I have come to enjoy making at home is some ukwaju juice! So refreshing! So delicious! Creamy Cumin Chicken Linguine

I am a pasta slave! In any and every shape it comes in, I will totally and willfully bow at it’s glory. There are over 350 types of pasta in existence, about 30 being most common, and in this country, Spaghetti is the most common pasta type. Some people say all types of pasta taste the same, but the real ones know each type does taste different and they all bring something different to the table. Each type of pasta tastes different because they carry sauce differently, pair different with specific sauces, must be cooked a certain way for a specific time and the starchiness breaks down different in a mouthful.  My top three favorite types of pasta are penne, lasagna and linguine. And for today, I am letting my queen linguine shine!! I gave you a sneak peak of this on twitter in January and the day is finally here that you too get to indulge in this beauty.

Coconut OatMeal with Cinnamon Zinzagaya (cape gooseberry) Compote

I love oats as a quick breakfast. I personally don’t find them bland- I love their simple flavor when I make them with just milk on a busy morning and also deeply enjoy how well they take up flavor of other ingredients I decide to pair them with. I love my oats with a fruity element- often a compote- and today I made one with what we the Maragoli call Zinzagaya (cape gooseberries).

I ran this past you guys on Twitter and I got to learn they are pretty common throughout Kenyan tribes, not just mine. The Kikuyu call them Naathi, the Kalenjin call then Cheloliit and the Kisii call them Chinsobosobo. So regardless of the part of the country you are reading this from, you will totally fall inlove with this breakfast beauty!

Garlic Broccoli and Carrot Stirfry

I always remember watching cartoons growing up and I remember broccoli being depicted as a disgusting veggie that everyone hates. Dexter hated broccoli. PowerPuff Girls fought slimy Broccoli aliens. Billy form Billy and Mandy haaated broccoli too. So in my mind, broccoli was not that great of a veggie. That all changed the day I actually gave broccoli a try. I loved them so so much and I that was when my life long love for this gorgeous veggie begun.

We prepare them in a very simple fresh way, which preserves the nutrients of this veggie. You will love this one!

Mango Blackberry Mocktail

Finally the sun is out as it really should be in what is typically our hot season! January was shockingly cool, and even more startling, rainy!! Sweet Chili Whiskey Loaded Hotdog

I made this recipe on a whim last year September. My sister was having her boyfriend over and she demanded (literally) that I fix them a snack while they watch their movie. I was not in the mood for cooking, and I wanted to make it quick but yummy therefore hotdogs -with my own twist- fit the bill! Mango Cucumber Chicken Salad

As it always is this time of year, I will always find an excuse to stuff a mango in my mouth! Be it eating 7 in one sitting or using them in numerous creative recipes, I will always find a way to have my daily dose of mango. Each year during mango season, we always make a couple of recipes with this bomb fruit. Rum and Cinnamon French Toast

January has decided to bring with it some unexpected cooler weather… January is one of the HOTTEST months of the wear for those of us in Kenya. It is one of the reasons it is one of my favorite months of the year too for that same reason!! I flourish in my shorts and minis. I love how light floods into the house. I love that I do not quite need a sweater at night. I miss that kind of January and I hope February serves the heat it always has since I was born!
