Mushroom & Sausage Egg Muffins

One thing I love more than an early morning during the work week is a late – super late – and super slow- morning during the weekends. A slow morning allows you to take in the beauty of the day. The slower pace of things allows your spirit to merge with the wave of time and ride it. Slow mornings allow you to taste the sweetness of the songbirds. As someone who really goes hard during work weeks, slow weekend mornings are a much welcome relief and calm sweetness. It also allows me to really take time and eat yummy things; and yummy things need not be complicated ones.

One of my current weekend favorites are my mushroom and sausage egg muffins. All my favorite yummy things are things are packed in these little beauties. They are the perfect savory bite, super simple to prepare and a true joy to have!

Garlic Thyme Mala-Marinated Mbuzi Dry Fry

I have always loved mbuzi (goat). It remains among my top five favorite meats to have! I love how Kenyans always have some during literally any celebration, and also during just-because moments. It takes up flavor so well and any chance I get to make some, I dive head first. On the day I made this, my soul was restless and the only thing it craved was some mbuzi. So I had to make it good good and honey it was worth my time!

This recipe is very simple. It brings out the full flavor of the mbuzi all the while allowing all the ingredients used therein to really shine! You will love this beaut so so much!

Mbuzi dry fry is the best way to enjoy goat meat. Slow cooked, super tender and really flavorful as a result

Ginger Sweet Corn Fried Rice

Life is super fast paced, more so now that we are adults and it  has gotten real! I have made a conscious choice to stop and smell the roses. It is very easy to get swept by the undercurrent of life. And if one does not deliberately stop and just be, the present business can consume you. Lately I have been reminiscing about my career, especially now that I am nearly reaching my 8th anniversary! Who would have thought that this girl would build a monster of a brand off of her name! Who would have thought I would keep this going for nearly a decade? Who would have thought simple ideas would turn into laughter on your dinner tables? Who would have thought! It has been quite the journey and I am deeply appreciative of every win, every stress point, every steep learning curve, every glorious collaboration and certainly, for every one of you.

Today’s recipe – my ginger sweet corn fried rice – is super simple. This particular one is a better rendition to this one I made and posted in August of 2014. I have no idea why the images are broken on that post, but it is completely worth it that I tweaked it a little bit and posted it once more for you to try out.

Roasted Garlic and Rosemary Kuku Kinyeji

I cannot begin to explain how fast December melted right through my fingers. For me, it has been my most intense, most fast paced month of 2021. One minute it was 1st, the next, it was 2 days to Christmas. What a ride! I have had the highest highs, and my lowest lows were definitely this month too. Even then, I celebrate the silver linings.

We are smack in the festive season and it cannot be complete without a delicious chicken dish to bring all of us together. There are billions of ways to prepare and enjoy chicken,  however one that always speaks to my soul is kuku kienyeji. I love my kienyeji and to me, it is the taste of home. For this Christmas season, I hope you get to enjoy my roasted garlic and rosemary kuku kienyeji.

Super Herby Creamy Mushroom Linguine

Every time I do a pasta post I have to start by reminding you guys how obsessed I am with every single pasta dish in the world! This is no different, so here goes: “Hi! My name is Kaluhi Adagala and I am a dedicated, toxic, overbearing member of pasta-hive and I adore it in every single form!” There are so many ways to prepare pasta. And as we discussed in this post, there are nearly 300 types of pasta, each with it’s own kataste, and each with best ways of preparing. I had some linguine in my pantry and some mushrooms in my fridge so it was just natural for me to whip up this perfect creamy beauty.

This super herby creamy mushroom linguine is one of my favorite quick lunches for a quiet weekend afternoon paired with a chilled glass of chardonnay. I love it when I want a quick, filling yet tasty dinner on a weeknight. I love it when I have a guest briefly dropping by. It is perfect and I know you will love it just as much as I do!

Brunch at Mercado

If you frequent Westlands, you have definitely seen a new restaurant at Kenrail towers right from the road. And that new spot is Mercado! I had been planning to visit Mercado with my younger sister last month for  some sister time, however the day we chose, they had closed down. We postponed our date not too far off into the future. And when they reached out to me to sample their brunch menu, I was more than happy to go and try it out. My friends  had amazing things to say about Mercado, and I was excited to try out the restaurant for myself. Because we missed our chance to dine at Mercado the last time we were there, I took my sister as my plus one, and it also happened to be her birthday, so that was my treat to her!

This review (and this amazing video) also includes some of my readers’ experiences at Mercado as per their Instagram DMs so that you get a balanced idea of the restaurant. These are our opinions, hence are subjective, so remember what one likes may be what you hate or vice versa since we are all different and that’s ok. Dirty Diana Cocktail

I did a post on 30 random things about me just over a year ago. One of the things I revealed about myself that very few of you may know is that my first name is Diana. Yes, Kaluhi is my (middle) name too, and the one my readers know me by since I wanted my brand to strongly identify as African from the very beginning. It was just a matter of time before I named one of my recipes after myself; and this cocktail was just too good to name it after it’s ingredients. Dirty Diana. Sounds a bit risque to some, yet peaks one’s interest a little bit. Mystery. Assertion. Power. Does it have anything to do with me? I don’t know 🙂 Let those who know me well decide that *evil grin*

I was home with my youngest sister chatting away about the things we just cannot wait to accomplish this year. And the perfect conversation starter was my Dirty Diana cocktail.  Food is simply a lot more delicious when you can share it with people you love, is it not? Mango & Cardamom Lassi

One of the things I will eternally love about December is that it marks the commencement of my favorite fruit season: mango season. And by this poll, Mango season is definitely your favorite fruit season too! I think if there is one fruit I can live on for the rest of my life, it would be mango. I love this fruit, not only because of its ability to take up other flavors so well, but also because of it’s versatility. My sisters call me ‘mama maembe’ (mother of mangoes) because of my absolute love for this fruit. And quite frankly, I do not mind that moniker :DD

To kick off the  mango season this time round, I have made an absolutely luxurious mango lassi with warmth of whole cardamom and a hint of sweet malt. As fully get into hot afternoons, clear skies and sunglasses weather, my mango and cardamom lassi is just perfect for every occasion and every mood!

Sweet potatoes in Cardamom Coconut Cream Sauce

Him: Potatoes are not meant to be sweet

Me: Yes they aren’t. But they are not potatoes, but sweet potatoes.

Him: Exactly! SWEET potatoes. I don’t think that should even exist in nature. Nduma any day.

Me: Nduma is delicious,totally agree, but so are sweet potatoes. If I was a sweet potato would you still like me?

Him: I would. You would be a delicious one too! In fact, I would change into a sweet potato too, just to live with my sweet potato girl.

Me: And we’d make beautiful sweet potato spawn (laughs). So that means you like sweet potatoes?

Him: No, I like you. Even if you turned into a sweet potato, i’d still like you.

My boyfriend finds it fascinating that I remember the tiniest of moments and conversations between us. The above was one of our sweet potato arguments, which I always remember when I make sweet potatoes. Today’s recipe plays up the beautiful sweetness of this root vegetable and I hope you will like is as well :))

Lime Poppy Seed Drop Scones

In our neighborhood, we usually have annual or bi/annual neighborhood get-togethers. One home volunteers to host the entire street for an afternoon of great company, catching up from our otherwise busy lives and also to indulge in some great food in community. Not to be picky, but their is this one home I never ever miss when they are the hosts. The lady of that home is called Violet but we call her Aunty Vio, because in Kenya, anyone who is not you mother is your aunt by default. Let me tell you, Aunty Vio can make one mean banquet. She does not joke around when it comes to hosting ; from the tender marinated meats, to the freshly baked moist cakes, to the array of fresh salads, and hearty starches. It would be mean to say I attend just for the food and not the company, LOL, but as a foodie, food is a huge part as to why I never miss out on the get-together when Aunty Vio is hosting. One of my favorite cakes that she usually bakes is her lemon poppy seed cake. She gets it right! From the texture and moistness of the cake, to the flavors, to the frosting. It is always a hit!! I make sure to get a huge slice each time and sneak some back home with me, in true Kenyan fashion, for post party indulgence. Do I sound greedy? Well, maybe I am :DD

With these memories as the back drop, I decided to make drop scones, one of my favorite breakfast recipes with a hint of  my favorite cake flavors. I substituted lemons for limes, but either way, they were super duper delicious. Can’t wait for you guys to try this out!!

Lemon Rosemary Chicken Strips

Let me admit: I struggle to make my chicken breast moist. Be it through frying or baking, somedays it comes out nice and juicy, other days it comes out dry. And when I say dry I mean as dry as kuni :DD. It is something I am yet to master, but in the cooking world, one never knows everything and each day is a chance to learn, yes? I still however almost always have chicken breast in my freezer, just in case I need to whip up something in a short amount of time. To go around the problem of dry chicken breast, I always make chicken strips with some kind of sauce. Chicken strips take such a short time to cook and having them drenched in a sauce gives them much needed juiciness. Cooking my chicken  breast this way has never failed me.

Today I give you my third chicken strips recipe; this time drenched in a rich cheesy lemon rosemary sauce. So so easy you can cook it with your hands tied and eyes shut! Lets do this!

Grape and Tree Tomato Jam

I love the energy Nairobi exudes in the evening. I get energized by the fast moving crowds and by the soft glow of dusk. The city really comes alive after dark! By 7 p.m, the sidewalks are crowded with hawkers selling all kinds of things, from wallets to clothes, to shoes, watches, to fruits and vegetables. Some people may consider this a nuisance, but to me it is part of what gives Nairobi its character and benevolence. During these times, my eyes are usually fixed on the ground. I eye all the merchandise laid before me, hoping that I would land on a good bargain. After getting a (really!!!) good pair of thrifted shoes, I then bought some fruits before finally heading home. Among them were tree tomatoes, which I had been searching hard for and finally found on the streets of Nairobi! I ate most of them (duh!!) and with those that remained, I decided to make a jam together with the grapes I had purchased that evening. Guys, this one you have to try out!

Karafuu and Rosemary Carrot Soup

August started with such a huge burst of sunshine and warmth. Glorious month it is, even more so that it is my birth day month! Unlike this year,  last year or the year before it always has the first two weeks of August still  shaking off the July freeze. This year has been different. Warmer. I however feel we have one more week of cold temperatures before we finally move on and enjoy beautiful sunshine. I prepared this carrot soup in anticipation of cozy cold nights in, but the weather decided to surprise us with some warmth. But in all honesty, soups can be taken in any weather. And I believe my soothing karafuu and rosemary carrot soup will warm your body and keep you comfy.

Ghee and Paprika Spicy Muhogo

I often reminisce about all the fun we had in Lamu over their Food festival held April. If you are yet to read my Lamu posts, you can check them out here and here. We had the time of of lives on that Island paradise. Not only did we discover plenty of cultural activity the residents proudly preserve, but we got to indulge in their food which has just as heavy cultural influence, with majority of the recipes passed down from generation to generation. We got to eat plenty of mahamri, viazi karai, bhajia ya kunde and a ton of sea food. It was in Lamu that I learnt that the locals enjoy having their muhogo (cassava) fried and sprinkled with some masala. This was the inspiration for today’s recipe, but of course, I had to do it #TheKWay! With abit of modification and giving it my own touch, you are going to love this just as much as I did <3

Rosemary and Garlic Tilapia Fish Fingers

“Nibakishie kitu tamu!” (Save me something tasty) My eldest sister Cheredi exclaimed as she spotted me in the kitchen cooking as she was on her way out to do her errands. You see, whenever I am developing new recipes for you guys, my sisters anticipate a feast. For me, that is a good and a bad thing. A good thing since I can make them happy through the great food that comes from the kitchen, and a bad thing since recipe development is usually so susceptible to serious failure! I hoped that this recipe would turn out great so that my sissy would come home to delicious food; to ‘kitu tamu’ as we always say. Lucky for me, this was a good recipe development day since these tilapia fish fingers were a 10/10.

I will show you how to make them, infuse flavor and incorporate spices to give you the best fish fingers you will ever make, with the littlest effort ever!

Cinnamon Breakfast Crumb Cake

My second ever baking post on the blog. People usually say if you love to cook, you don’t love to bake. But I absolutely don’t believe that since I actually have a knack for baking. It is just that, my oven has not been working for almost 2 years now. Remember this post where I told you all about it? :(. But whenever I can, I shall be sneeking in baking posts for you guys.

As we move closer and closer to the colder months of July and August, I am usually more into really indulgent foods. I like having my sweet cake with while enjoying rainy foggy Sunday afternoons in. Orange and White Chocolate no-bake Cheese Cake

Is it just me or the more you don’t want your mom to find out about something, the more likely she is to find out about it? I don’t know it that sentence makes sense, but if you get what I mean, I think you can relate. Moms have a inbuilt “mischief sensors” that kick in whenever we secretly do what they tell not to do. My mom is TOTALLY against food wastage. I had bought some strawberries to make this cheese cake with. I got so busy in between and I kept postponing. Slowly but surely, the strawberries got spoilt. I felt guilty, but knew I had to throw them away before mom saw them. I hid them amongst some veggies so that I could throw them away when she was not around and guess what, she found them in just a few minutes. Did she sense I was up to something? I think she did. One lecture on food wastage later, I realized that was stupid of me and decided to use oranges instead. The result: stellar as always. I will show you what to substitute a bread or biscuit crust with to give you the same A+ results.

Amarula and Lime Zest French Toast

Am I the only one who cooks according to their mood? Sometimes I just want something rich and sweet sometimes laziness doesn’t even allow me to step next to the cooker and I settle for leftovers. On this day, I was feeling the former. I woke up with the sole goal of having something absolutely delicious for breakfast. And since I had nothing sweet ready for me, that meant some experimentation and lucky for us, a new recipe :)) Side note: Have you subscribed to my YouTube channel? You should!!!

Since I had had a tiny bit of Amarula Creme Liqueur in my fridge, I decided to make my breakfast one hell of a feast. Let me tell you, my mouth is watering as I am typing this out since I can remember how out-of-this-world good! Guys, easy does not have to be tasteless. You can have it good right at home! Tastes, Sights and Sounds of Lamu Food Festival

It rained hard last night while I was editing the pictures that I took during the Lamu Food Festival. I couldn’t help but contrast the Nairobi weather and secretly wished that I was editing my pictures from my room balcony overlooking the ocean, feeling the warm night ocean breeze and hearing the soft waves against the beach. I swear, I can still feel motion as though I am on a boat. It had always been a dream/goal for several food bloggers and I to attend Lamu food festival and we vowed to make this year the year. After few emails and several calls were on our way to a culinary adventure in one of the most dreamy destinations in Kenya, Lamu. I had a hard time choosing which images to use for this post. Sweet & Spicy Chicken Wings

I made these sweet and spicy chicken wings when my sisters were home over the weekend. It is always fun when we are all home. Suddenly, the house is loud and noisy, but in the warmest and most inviting way. We then catch up on stuff we have been doing, stuff we are planning to do and get some good laughs in. And what better way to do this than over delicious food. Not only were we eating these bomb chicken wings, but also enjoyed this orange and ginger cake my eldest sister had baked that very morning. I love my foodie sisters <3

These wings are very simple to make but they are so so sooooo good! The marinade used for them is very simple and passed down form my mum to us. Do yourself a favor and try  out these sweet and spicy chicken wings.
