Curry & Coconut Cream Njahi

I totally get and respect the fact that we all like different things because we are different people. But aki you guys – especially my twitter family- huwa mnaongea mbaya sana juu ya njahi lol! It’s actually not many people who talk smack, it is just a few people who are loud about their dislike; so it seems like the whole world hates njahi. The likening of njahi to soil, to a mattress, to rocks, to sweat; are really hilarious to be honest, but it kinda breaks my heart too that some people are actually living life without having ever tasted delicious njahi. In my book, anything and everything can be made delicious. If you match up your ingredients well and play up on fresh herbs, anything -including njahi- can be tasty!

If you have been looking for a perfect njahi recipe, this one is for you. If you already love njahi, here is another recipe to make you fall inlove with it once again!

Ukwaju Juice

I love making my own juices at home. Not only is it waaaaaaaaaaaaaay cheaper, but also, unlike box juice, you get to control the amount of sugar you add and it is also preservative free. I love mango juice. I love the juice combo of mango and passion fruit. I loooove pineapple and mint. I love just passion fruit juice on it’s own. I love orange juice, though it making it freshly squeezed is quite the work out lol! Another one I love and I have come to enjoy making at home is some ukwaju juice! So refreshing! So delicious! And one you too will enjoy having at home!

Creamy Cumin Chicken Linguine

I am a pasta slave! In any and every shape it comes in, I will totally and willfully bow at it’s glory. There are over 350 types of pasta in existence, about 30 being most common, and in this country, Spaghetti is the most common pasta type. Some people say all types of pasta taste the same, but the real ones know each type does taste different and they all bring something different to the table. Each type of pasta tastes different because they carry sauce differently, pair different with specific sauces, must be cooked a certain way for a specific time and the starchiness breaks down different in a mouthful.  My top three favorite types of pasta are penne, lasagna and linguine. And for today, I am letting my queen linguine shine!! I gave you a sneak peak of this on twitter in January and the day is finally here that you too get to indulge in this beauty.

It is saucy, it is creamy, it is rich, it is meaty and it is unforgettable!!

I always remember watching cartoons growing up and I remember broccoli being depicted as a disgusting veggie that everyone hates. Dexter hated broccoli. PowerPuff Girls fought slimy Broccoli aliens. Billy form Billy and Mandy haaated broccoli too. So in my mind, broccoli was not that great of a veggie. That all changed the day I actually gave broccoli a try. I loved them so so much and I that was when my life long love for this gorgeous veggie begun.

We prepare them in a very simple fresh way, which preserves the nutrients of this veggie. You will love this one!

Best Ever Carrot Cake!!!

I think as the weather cools down we all naturally gravitate towards very indulgent things! My body demands more cheese! More stews! More cake! Plenty of cake! I told myself to stop joking and bake more this year, and yes, we are doing just that. I am laughing as I type this coz I thought baking would be scary, and oh! I was so wrong!!! Learning my way has been fun, and as always, bringing you along makes the journey even better!

My sister suggested that I make a sponge cake, but my gut decided we should make carrot cake. And guess what, it is the BEST EVER!! Is that too bold of a statement? Maybe… But one I can confidently stand behind! I cannot wait for you guys to try this out!

Rosemary & Garlic Viazi Karai

I loved walking home from school. Every other day, we took the bus, but on Friday, we would forgo a bus ride and instead use the fare for buying snacks and treats along the way. We would grab some sukari nguru ya 3 bob in Otiende, then viazi karai or bhajia for 5 bob at Akiba and with what’s left over- some mahindi choma or ice near SouthLands. 10 bob could really be stretched a long way, and everything we got was very much worth the walk. Now as adults and with full knowledge of how to make all these tasty things ourselves, we do just that, of course with tiny but super delicious twists. Hope you are ready for my rosemary and garlic viazi karai.

Red Cabbage and Orange Fish Salad

I am finding so much joy in making salads nowadays! I love developing my own flavors and putting together fresh ingredients and surprise my pallete. I have gone through fruit seasons, and with that, delicious salads too. Now that we are smack in the middle of citrus season, let us delve deep into my red cabbage and orange fish salad.

Karafuu & Ginger Drop Scones

One of the things I love waking up to is the aroma of drop scones on a Saturday. My mom makes them once in a while, and when she does, you bet I am always the first to go eat lest my siblings finish everything as i dilly-dully in bed. She makes them so well, and I honestly not only love these, but everything mom makes. Mom’s food always rocks, right? I took her recipe and added a twist on my own. I was kinda nervous when I made these, and wanted her honest opinion on the same. She loved them and asked me for specifics of what I added and decided to make them as I did going forward! My heart melted!

If mom said this recipe is bomb, trust me, it is 100% worth a try!

Cumin Bhajia with Honey Ukwaju bbq Sauce

I can very well call myself madam potatoes. I love potatoes so so so much. Potatoes are my favorite starch, because they are very delicious (duhh!!!), but beyond that, they take up flavor really well. There are a billion ways to have them without ever ever getting bored. And with all the anti-carb rage all over the world, potatoes can count on me to love then today and forever more!!

For today, we are making some cumin maru bhajia with my honey ukwaju bbq sauce. I made this same sauce a few months back for this chicken thigh recipe, and it would hurt no one to do it once more today! Let’s get to it!

Pilipili and Rosemary Marinated Mbuzi Choma Na Kachumbari

There are a couple of things that are distinctly Kenyan. “Me I” is distinctly Kenyan. Our loud, artsy Matatus are distinctly Kenyan. Phrases such as ‘wah’ ‘si’ ‘hebu’ can only be understood by someone who has grown up Kenyan; and even when explained, the meaning will not be understood as it should. Choma over every holiday, and if we are being honest- during any time we get together- is one of those distinct Kenyan habits. We love our choma!! Choma is a roast- equivalent to the South African braai. We do love our meat, and roasting it makes it even better.

Mbuzi (goat) choma is very very popular too. It is among my top three favorite chomas and today’s recipe and video takes you through how I make mine explosively good!!! I hope you love it as much as I love it!

Lemon Pepper Chicken Thighs with Honey Ukwaju BBQ Sauce

What a brilliant year 2018 has been!! For me, it has been the year of becoming, settling into myself and growing into my full potential. It has been a year of self growth, coming face to face with uncomfortable truths about myself, learning and unlearning those that are malleable, and becoming an overall better person. It has been a year where I have become deliberately present for my friends, and finding time to catch up in the midst of work, starting families and travel. It has been a year of delicious financial gain and tangible growth of my brand. There has been plenty of self-assertion and no taking of bullshit especially from twitter trolls.  It has been a wild, thrilling ride of self discovery that I am thankful for- because it has set the stage for the incredible person I am blossoming into in the years to come!

To send off this brilliant year is an equally brilliant recipe- my lemon pepper chicken thighs in my honey ukwaju bbq sauce. Crazy easy to make and it is so good that your eyes will be rolling to the back of your head with each juicy, meaty bite!! Let’s get to it!

Thyme & Cumin Veg Burger With Creamy Lime Avocado Sauce

Living as a vegetarian in this country is crazy EASY!!!!! We are so fortunate to have very many fresh ingredients and a ton of pulses that can be cooked in many different ways. Being vegetarian is not complicated or special- it simply means one does not eat meat. That means you can very readily enjoy a majority or Kenyan meals without slashing out plenty from our everyday meals. You will still enjoy your bhajia, viazi karai, ndengu, chapati, egg curry, githeri, bean stews, ugali, all our amazing traditional mbogas, biringanya, seasonal fruits, rice dishes, faluda, vibibi, vitumbua, mandazi, viazi vya rojo, njahi….the list is literally endless! We surely do live in the best country on earth!!

I love meat but I do not hesitate cutting it out from my dies once in a while because I still know I will eat delicious meals with all the amazing produce we have. I love meaty burgers but veg burgers are equally as delicious! My veg burger, whose patty was made with njahi and mushroom- and with the rich flavors of thyme and cumin  was one for the books!
