Chicken salad with Honey Mustard dressing

Ushawai keti tu hivi na unaskia kukula kitu tamu lakini haujui nini?? That is exactly what I was feeling a few hours before I went into developing this salad. I wanted something sweet yet not like a cake. I wanted something meaty but not necessarily a burger ( I love me a good burger! Don’t get me wrong!!) I wanted something light but filling as well! That meant that I just had to make a salad! I just had to!! I had some chicken in my freezer, took that out, marinated it and put a hold on my cravings to be satisfied the next day.

And boy oh boy! Weren’t they not satisfied so spectacularly!!! My chicken salad with a honey mustard dressing ticked all the boxes, excited my taste buds and filled my tummy!! This is so perfect and I cannot wait for you to fall inlove with it as well!

Chili Cumin Coconut Milk Yellow Bean Stew

I love me some beans!!! I know I say I love everything in the world lol but beans.. Beans! Heh! Beans hold a special place in my soul regardless of the shape and form they come in. I love them in my tacos, I love lots of them in my githeri, I love baked beans as part of my brunch and of course I love a good bean stew. Beans take up flavor so so well and when done right, they slap harder than a sister whose top you wore without their permission!! I have loved yellow beans for a hot minute now and they had to be part of this recipe. My chili cumin coconut milk yellow bean stew is perfect now for the final days of the rainy season and any other time of year as well! Beautiful to look at and without doubt, super duper tasty to have!!

Best Beef Pilau In The Universe!!!

Happy New Month guys!!!

Heh! Si this year imekimbia!! Just one moment ago we were celebrating the new year and here we are wrapping it up. 2019 for me has been a year of immense mental self-improvement. It has been the year of the shadows of my inner child being dredged up and demanding to be dealt with and healed. 2019 has been the year I finally started savoring and deeply enjoying being single. 2019 has had me make some big girl purchases and making big girl investments *aggresively flexes muscles*. Overall, it has been a dope ass year and I am looking forward to the remaining 7 weeks!

As we take in this month, take stock and reflect, let us do that while enjoying something super delicious!! On my table today is the beeeeeeest ever beef pilau! I know you will love this!

Chili Cinnamon Butternut Soup

Last week was wet and rainy and i enjoyed every second of it. In my heart of hearts, I am a girl who loves sunny weather. Sunny weather puts everyone in a great mood. It brings excitement.  It brings a mood of celebration.  As i grow older though,  i have come to appreciate the comfort that rainy weather brings. Serenity. Not forgetting indulging in amazing soups! I have about 13 soups on here and now we are adding yet another one. It may not be too rainy today, but this will def come in handy as we move into November! Whether on it’s own or as part of your spread,  my chili cinnamon butternut soup will always make your heart sing!!!

Thyme & Oregano Scotch Eggs

My mom looooooves hosting! She always goes out of her way to make sure the guests she has over have the time of their life not to mention, an elaborate banquet to feast upon. She would make sure our food was set aside first and the rest taken to the dining table for the guests. I remember the first time I had scotch eggs was on one of such days. Mum had guests over, and before dashing out to play, my sisters and I were sat down for lunch. My little hands reached out for this unfamiliar brown ball. I was skeptical, and left it for last. Until my sister Kadesa took a bite and exclaimed “Ni tamu!!”. I reached out for mine, and indeed, I loved it! This new thing, that had both egg and sausage – things I love- was delicious! I later on learnt that they were scotch eggs and have been inlove with them ever since!

Today I put my own twist on my mom’s recipe and give to you my thyme and oregano scotch eggs. Mtapenda!

Embe Dodo & Coconut Milkshake

In high-school and shortly after, I had a severe milkshake obsession lol. Literally each time I left the house, I gathered my coins and counted them so intently hoping they would be enough. I tried them from all restaurants, and in all flavors. Then as I approached my 20’s, I completely lost my sweet tooth and I have since fell out of love with my milkshakes. Despite that, the craving strikes once every 6 billion years and I indulge myself. I like making my own at home, playing around with different simple combinations and I have enjoyed each one  I have made!!

Today’s is one I have so very much fallen inlove with – my embe dodo and coconut cream milkshake! Let me show you how I made mine!

Chicken Biryani

Good food puts me in an excellent mood! Food is the perfect icebreaker and the perfect conversation starter. Food is comfort. Food makes a road trip more scenic. Food makes a visit more memorable. Yes food is primarily for sustenance, but because we eat everyday anyway, why not make it enjoyable no? And let’s praise the heavens that it is not complicated at all to make delicious, deeply flavorful food!!

Some people may think making chicken biryani is complex, however, that is far from the truth! Flavor packed does not need to unattainable, and I am right here to show you that! I made a goat biryani last year January, and today, we do some bomb ass chicken biryani!!
