Potato Latkes and Salsa Verde

Have you ever read the name of a dish and the sound of it makes it a little bit intimidating to try, but then upon reading through, you realise it really is easy to make? The sound of this post may evoke such emotions. All  I can guarantee you is that this is one of the simplest and speedy recipes yet that you can unleash on short notice. And there is nothing better than something that sounds so sophisticated, but is so easy to prepare.

I think it is becoming apparently clear that one of my favorite ingredients to cook with are potatoes. I like them because there are infinite things to do with them. We have made several potato dishes like this one, and this, and this, each of which have their own character. Today we are going to make the easiest, crispiest potato latkes, that you can make blindfolded and the juiciest salsa verde that really compliments them. The best part is, you can get all these ingredients readily 🙂

Here we go:

Ingredients

For the potatoes

2 large potatoes

1 large egg whisked

3 tablespoons of all purpose flour

1/2 a teaspoon of salt

1/4 teaspoon of black pepper

Vegetable oil

 

Method

Peel the potatoes and grate them. Wrap the potatoes in a kitchen cloth or a paper towel and drain out as much liquid as possible. Combine the potatoes in a bowl, together with the egg, flour, salt, pepper and mix together.

Heat your vegetable oil, mold your potato latkes in your hand, do not make them too thick, 1/2 an inch is enough. Once you are done, put them in the hot oil. Allow each side to have 2 minutes on the heat until the potato latkes turn golden brown.

For the salsa verde

1 bunch of coriander

1 table spoon of dijon mustard

1 clove of garlic

1/4 teaspoon of dried basil

1/4 teaspoon of black pepper

1 teaspoon of vegetable oil

 

Finely chop your coriander and add them into your pestle. add a pinch of salt and your garlic, then pound. Add the basil, black pepper then pound for about 30 sec or whenever it forms a puree.

Put you dijon mustard and mix, chill it a little bit then serve. I got my dijon mustard form Nakumatt and it retails at about sh.200 (approx. $2)

The latkes are really crispy on the outside and soft on the inside. Together with the salsa verde, you have the perfect marriage of ingredients 🙂

    Looks so delicious,but i cant stand the smell of eggs…does it have that smell after frying ,i really want to try this..

      Hey Mercy, no it does not carry/retain the smell of eggs after they are done. Just ensure they cook through
