Fried Nduma with Crunchy Bread Crumb Crust

Have you ever eaten something after years of resistance and wondering why it took you too long to try it? That was me with nduma. Just like I did matumbo, I would avoid putting it in my mouth at all costs for reasons unbeknown to me. But when I finally did, I can not have enough. Nduma are what we Kenyans refer to arrow roots.  They are super duper nutritious and taste so good. Thank God I got over my senseless fear,LOL.

At home we usually just have them boiled. But I have been encouraged by numerous people to try them fried. Everything fried is tastier after all, so I decided to give this a try. To add to the texture, I coated the nduma with breadcrumbs, seasoned lightly with nutmeg which  transformed this to the most glorious breakfast meal. My tongue has never been as delighted! Yours will be too, promise!

My mind-blowing nduma ingredients

3 nduma roots

1/2 a teaspoon of ground nutmeg

1 cup of bread crumbs

1 egg, beaten

Method

Peel your nduma and cut it in 2 inch thick circular slices. You can cut it whichever way you want but I like mine this way since they look neater and boil alot faster.

Quick tip: After peeling your nduma, rinse them immediately and let them stay in water up until the point you want to boil them.  This prevents them from getting oxidized, which darkens their color significantly.  Also, give then several rinses to remove all mud that may stick to them since the root is very fibrous and carries with it plenty of loose soil.

After they have boiled, allow them to cool slightly. While you are waiting for that, you can beat your egg in a bowl and prepare your bread crumb crust. This is simply done by mixing some bread crumbs with the nutmeg in another separate bowl. These are the same bread crumbs I used for this post several months back. They cost 100 shillings only and have lasted this long!

To coat the nduma, simply dip them in the egg mixture and then roll it in the breadcrumbs. The egg acts as ‘glue’ for the crumbs to adhere to and contributes to the crispiness.

Heat your oil and put them in to fry after it is hot enough. Let them fry  until the coating tuns golden brown. That will be about 2 minutes on each side.

Remove them from the heat and drain on a paper towel then serve.

Let me tell you, this was DELICIOUS! I gobbled this down until I felt guilty of eating too much, then I stopped. Yes, I have a problem ;D

    however im nt that much of a nduma fun…do u think the same recipe can work, but with cassava instead?…or even sweet potatoe
