Cinnamon Rolls with a Mango Amarula Frosting

December was really a month that I had my creative juices flowing!!! I guess I really did needed down time  because a rested mind is a creative one. I love the holidays so much because not only is it rest time and a valuable time but time for a little bit of indulgence. I have always been a mindful eater, but over the holidays I let loose a little bit. Just a teeny tiny bit. Because everyone is at home too, we experiment a lot and what we make is always a feast! I first flirted with the idea of marrying Amarula and Mango last month as I shared with you on twitter; but just didn’t know how I’d do it. After some hopping off and on some ideas, I settled on todays beauty of a recipe and I am excited to share with you guys!

PREP TIME: 1HOUR     COOK TIME: 25 MIN       SERVES: 7

Ingredients

For the rolls:

4 cups of flour

3 teaspoons of yeast

1 cup of mala

1 tablespoon of brown sugar

1/4 tsp of salt

1 stick of butter

1 tablespoon vanilla essence

3 eggs

For the roll filling

4 tablespoons of brown sugar

2 heaped tablespoons of cinnamon

1 tablespoon of ginger spice

For the frosting

3 tablespoons of Amarula

1/4 teaspoon of clove

250g cream cheese

200g of whipped cream

1 tablespoon of vanilla extract

Mango reduction ( one mango cheek, 1 juiced lime lime, 1/3 cup of granulated sugar)

Method

Add the dry ingredients on to your bowl and then mix them in with the whisk. Because the filling and the frosting will be sweet, we shall go easy with the sugar for the rolls themselves lest we go overboard.

Pour in your mala and crack in the eggs and vanilla. Mala is fermented milk and close substitutes would be amasi/ kefir/ buttermilk depending where in the world you reside.

Roughly mix with a fork, then add the butter then proceed to knead for about 15 minutes until the dough is soft. You can see that in the video from 2.40 – 2.52.  If you shall be kneading with a mixer, knead for 8 minutes. Once you are done, your dough will be very soft, but not sticky. That is when you will know you are on the right track.

Place it back into your bowl, cover with a cling film and let it rise for about an hour. It will change from this:

To this! Look at that rise!! This really made me super excited!


Prepare the filling by mixing the brown sugar, cinnamon spice and ginger spice. Because these are cinnamon rolls, it is no brainer that cinnamon features very prominently and it does so in the filling. To further warm up the beauty of cinnamon, I added some ginger spice.

Mix the three filling ingredients and once combined, it should feel like damp sand.

Remove the risen dough from your bowl and roll it out onto your countertop about quarter inch thick. Slather butter on top of it, and then sprinkle the filling on top of it.

Pat it in and then proceed to roll into a log. Pinch the end so that it does not unroll. The video beautifully shows that from 6.02 – 6.25.

Proceed to slice into your individual rolls. Make sure your knife is very very sharp so that the rolls do not fold in as they would were you to use a blunt knife. You can really see the air pockets as a result of our yeast working and because of that, the rolls at the end of this are guaranteed to be really soft!

Place the sliced rolls on a greased pan, let them rise for another 15 minutes then bake at 150c for 25 minutes.

As they are baking, prepare the frosting. I toyed with the idea of having mango feature in my cinnamon roll recipe last month as I told you guys on Twitter, I just did not quite know how to introduce it. It later made sense that having it in a frosting would be perfect and to take things up a notch, we added abit of crème liqueur and for that I used Amarula.

A mango puree must first be prepared. Take one cheek of a mango, blend it and then add it to your sufuria together with some icing sugar, and lime juice. The video shows this so splendidly from 8.06 – 8.20.

Let this simmer for about 10 minutes on low heat until thick and concentrated. Tafadhali do not use a juice, you will need a mango reduction in order to ace this my love.

To make the frosting, begin by adding the whipped cream, the cream cheese, Amarula, vanilla and clove into your bowl and whip it until stiff peaks form. Thereafter add your mango puree and gently fold it in and you’ll be done.

Give it a taste and if you need to further sweeten it, adjust the sugar upward as per your taste.

Once the cinnamon rolls are done, let them cool for a few minutes and then douse them in the frosting while they are still nice and warm and then they’re ready to serve.

I mean, look at these beauties! They are indeed perfect and taste immaculate as well!

I love how the sweetness of the cinnamon danced with the warmth of the ginger in the filling. The rolls themselves were super soft, super airy and the frosting we doused them in turned them from ordinary to unforgettable! The clove in the frosting  allowed the mango therein as well to pop and the amarula made this ever so indulgent! We are smack in the middle of mango season, so make this a treat to really enjoy!

      Yes however your dough may not get the same airy rise and flavor that yeast brings to the table. I recommend that you use yeast

    I’ve always wondered if there were other ways to use this South African liqueur thank just in cocktails and I found the perfect use. The cinnamon rolls were flavourful especially with the mango.
