Thyme and Oregano Lamb Chops

I am one of those people who cannot get something out of their mind once they start craving it. I may momentarily concentrate at the task at hand, but rest assured that what I want to eat is that lingering thought I will always have. Having not had lamb in a long time prior to this, and really wanting to have some, I was totally not going to rest or concentrate on anything until I had some. And you know what, I went out and got myself some lamb, made a delicious marinate for it and cooked it the next day. I could hardly sit through the marination, but I knew I wanted it delicious so I had to wait. And yes, it was worth the wait! This was one very very simple recipe, but as always, one you will fall inlove with <3.

PREP TIME: 24hrs    COOK TIME:  10min       SERVES: 3

Ingredients

600g of lamb chops

6 mint leaves, finely chopped

1/2 a teaspoon of dried thyme

1/2 a teaspoon of dried oregano

2 tablespoons of mayonnaise

5 cloves of garlic

2 tablespoons of honey

1 a teaspoon of ginger

1 tablespoon of soy sauce

1 tablespoon of olive oil

2 tablespoons of coriander leaves, finely chopped

1/2 a teaspoon of cumin

1/2 a teaspoon of black pepper

1/2 a teaspoon of paprika

1/4 tespoon of chili flakes

 

Method

Place your lamb into a bowl {well, duh!} and then add all the ingredients into the bowl. I bought my lamb from CarreFour since I did not want to venture too far from home, However you can always find a nice rack in city market. I buy my meat from stall no.38 all the time. I lost their number but when I do find it, I will def share! <3

I chose paprika, oregano, thyme, chili and cumin as my spices for the lamb. I feel cumin and paprika inherently go really well with lamb. Chili is definitely always on my list as a kick of heat is always appreciated. I went with chili flakes however whole fresh bird’s eye chili (or any other chili really) would work well too. Thyme and oregano were my dried herbs of choice as I feel they go well with red meats. I got all my spices form our local supermarkets so do not shy away from spice aisles.

Parsely and mint were my fresh herbs; dania would work well in place of parsely. It was m original choice but I went with my best next available substitute. I got my mint from CarreFour as well at 20bob a bunch, but you can find it in Zucchini and Tuskys too.

The mayo helped in keeping everything moist especially when coupled with the olive oil and the honey introduced some mild sweetness. Do not add too much honey as it will ruin everything! Ginger and garlic, my ever faithful dynamic duo, also boosted the flavor profile. After you mix everything in, allow to marinate refrigerated overnight or upto 72 hours. Remember, the longer you marinate, the deeper the flavors. Next day, it will look like this:

The next step is super easy: the searing. A good heavy cast iron pan will work best; but since it’s never that serious, your favorite pan will still work fine. Bora iive, sindio?  Once your pan is hot, sear the lamb chops until cooked as per your preference. I love mine medium so I cooked mine that way.

However, if you love yours well done, just leave it on longer than I did. Once done, Let the lamb rest, so that the juices are released and the muscle relaxes. We all want that lamb juicy y’all! Serve with your favorite side, and salad, then dig right in!

Such a symphony of explosive flavor!! You can taste the every single note; with the thyme and oregano as most prominent. You can of course play around with different proportions and settle for what you like best, but for me, this was perfect <3.
