Iliki Banana Pancakes

The simplest foods are often the most comforting! I love how a biting into a mango feels like sunshine in my face. I love how creaminess of avocado and githeri feels like melty body butter on my skin. I love how labania za maziwa feel like a shower of forehead kisses. I love how chai masala feels like comfortable, familiar excitement. And I love how pancakes- specifically banana pancakes feel like staying in bed longer on a slow Sunday morning!

Banana pancakes are so simple to make, and are one of my favorite things to have. I always switch it up when I make mine, but my faaaaavorite way to enjoy them is with my favorite warm spice taking center stage- as iliki banana pancakes. You will fall in love with this one too!

Iliki Pancakes with Pear Caramel Sauce

Change. There is so much beauty in change. We bid goodbye to one amazing thing and welcome another different, but equally beautiful one too. We are {verrrry} slowly moving away from gloriously sunny weather that I love, and awaiting the cosy rainy season that I love too :D. I am without doubt thoroughly sad that mango season is now over, but pear season is right here with us! Besides enjoying this amazing fruit as it is, this gives us a chance to enjoy it in our cooking in all innovative ways we can! As the second pear recipe for this year’s pear season, we are getting into my iliki pancakes with a super easy to make pear caramel sauce.

Mahamri

I always tell you guys not to get discouraged when you encounter kitchen blunders while cooking. Instead, you should learn from your mistakes, pick your self up, and try again util you get it right. Our mamas did not raise quitters :DD. As someone who cooks all the time, kitchen blunders and horrific recipe disasters happen from time to time. But with time, the frequency of the mistakes lessen since you get to know what works and what doesn’t. Your mistakes only aid in making you better if you choose to learn from them. Let no one lie to you that they never make mistakes in the kitchen. We all do! I showed you some of my massive fails in this post (read it if you haven’t). I stumbled a little bit while making my mahamri too. My first try had me create the hardest, flattest and most hideous mahamri LOL! I then sat down, thought hard and figured out where I went wrong and got it right in my next try. I will take you through how to make bomb mahamri, tell you exactly where I went wrong the first round and make sure you get it right on your first try <3

Chicken Biryani

One of my closest friends while I was growing up was a beautiful girl called Sakina. We were very close and played at each other’s homes all the time. Our parents too were very close because ours was a relatively close knit neighborhood. Like nearly every African country, one home’s celebration is the entire neighborhood’s celebration. So whenever there was a party or celebration at Sakina’s place, it was the entire neighborhood’s celebration. I absolutely loved to go to their place because Sakina’s mum always whipped up the most decadent and exotic meals I would have in a long time. Served in generous portions, she made sure that all guests had their tummies full. The parties at Sakina’s home were not to be missed. Period! The very first time I had biryani was at their home, and it really blew my breath away. Today, I relived those fantastic memories and made this unforgettable chicken biryani. This recipe is so fantastic, it will make people want to move in with you.
