Sweet & Spicy Chicken Wings

I made these sweet and spicy chicken wings when my sisters were home over the weekend. It is always fun when we are all home. Suddenly, the house is loud and noisy, but in the warmest and most inviting way. We then catch up on stuff we have been doing, stuff we are planning to do and get some good laughs in. And what better way to do this than over delicious food. Not only were we eating these bomb chicken wings, but also enjoyed this orange and ginger cake my eldest sister had baked that very morning. I love my foodie sisters <3

These wings are very simple to make but they are so so sooooo good! The marinade used for them is very simple and passed down form my mum to us. Do yourself a favor and try  out these sweet and spicy chicken wings.

PREP TIME: 20 MIN                COOK TIME:30 MIN               MAKES: 12

Ingredients

12 chicken wings

6 cloves of garlic

1 tablespoon of dried rosemary

4 tablespoons of apple cider vinegar

½ a cup of ketchup

4 tablespoons of sugar

½ a tablespoon of cayenne pepper

1 tablespoon of royco all spice mix

1 tablespoon of blackpepper

Shalimar Indian spice blend

 

Method

Clean your chicken wings and place them in a container. Add the marinade ingredients: rosemary, garlic and the apple cider vinegar. You can never go wrong with chicken and rosemary! We have always used this marinade at home and it delivers on flavor! It is my mom’s marinade and I have never changed/added anything to it. It is the same one I will pass down to my kiddos.

Mix this all up then cover and allow this to marinate for 6-12 hours. The longer you marinate, the more intense the flavor. I marinated mine for two days and it was nothing short of magic. You HAVE TO keep your meat refrigerated while it is marinating to preserve its freshness.

Once the marination is done, pour all the content of this marinade in a sufuria and boil the wings until they are cooked through.  While that is going, put the seasoning spices (royco, black pepper and Shalimar) in a container and mix them until it forms a paste. Shalimar Indian Spices are found in ALL supermarkets and cost 99 shillings.

Once your wings are done, dip them in the spice paste one by one. These are yet to be cooked and look at how delicious they look already. Seasoning the chicken in addition to marination are absolutely mandatory if you want out-of-this-world-good chicken.

Heat some vegetable oil and proceed to flash fry them until they have a golden brown char.  Since they were already pre cooked, they will take just under 2 minuted to get this char. Set aside and drain on a paper towel.

For the sauce, put the ketchup, cayenne and sugar together with 1.2 a cup of hot water. Let this cook down on low heat until it thickens. This allows the sweet and the spicy to meld without tasting like separate flavors.

Once it has, remove from heat and slather it all over your chicken wings and garnish with your finely chopped coriander.

    P.S.: I finally attempted three breakfast recipes I’d been wanting to do so…the Orange and Raisin pancakes, the Avocado and Milk omelettes, and the Lime and Mango smoothie (Heavvvy!!). They were delectable. Still get praised by my friend and lemme just say, I’m tired of deflecting the praises back to you; allow me to bask in them a little 🙂

    I have some questions… can I sub apple cider for soy sauce? plus can I use fresh rosemary instead of the dried one?

      Hey Sheila,
      You can sub fresh rosemary with dried one. They are the same thing so they will work the same way.

      However, You CANNOT sub apple cider vinegar with soy sauce since they are totally totally different things in terms of chemistyr, taste and what they do while cooking. Because they are too different from each other, they cannot be substituted for each other.

      I used ACV to make use of the acidity in the vinegar to soften the chicken. Soy sauce lacks that acidic nature. In place of Apple cider vinegar, you can use freshly squeezed lemon juice plus the zest. It will give you the same result as when you use ACV because i=of its acidity. But when you can next time, try it with ACV. Its just 250 bob and it lasts a loooooong time too.

    Hey. If I don’t have ketchup around, can I substitute it with tomato paste?

      DO NOT by any means use tomato paste as a substitute for ketchup. Let me ask you, when you do not have ketchup, would you put tomato paste on your fries? I dont think so :). But you would use kawaida sauce, sindio? So for this, the best substitute for ketchup would be just normal sauce.

    There are no Shalimar Indian Spices outside Kenya – at least where I am. Please let me know from the packet what the blend contains, then I can source for the closest that I can get.

      Hallo AvidFan,
      The spice blend has: garlic powder, ginger powder, cloves, cardamom, cinnamon, turmeric, salt, chilli powder, coriander, garam masala

      I am not too sure about the ratio they used but you can start bu having various combination quantities then customizing it to exactly as you’d want it.

    What about salt?

      I added some while boiling my chicken. If I miss a basic ingredient like salt, just use your own judgment and decide when and how much you will add some for yourself. The recipe will still be as good even when you decide to put salt for yourself at whichever point

    love how you simplify your recipes Kaluhi. A quick question though. Can this recipe apply to kuku za kienyeji? i mean some of them zinakuanga ngumu sana

      This unfortunately cannot apply to kuku kienyeji. But my thyme and garlic goat meat recipe can be used on kuku kienyeji. Quick tip: For kuku kienyeji, i swear it is usually soft. You just need to boil it for long enough. Boil it until it is soft, not until the blood is done. Kuku kienyeji can be sooooo soft!

      Drumsticks will be the best. Do not use breast, it will just end up being dry and tough.

    oh my goodness, this recipe and your blog . Taste of paradise . so i tried this out just yesterday and it came out perfectly . My question has to do with the sauce because i went a little bit over the top with it and now i have a remainder of it but no chicken . How should i go about storing it?

      Just store it in your fridge. Use that batch next time you make chicken.

    I was wondering, can I bake the wings instead of frying? If so, how/when should I do it?

      For baking, Instead of add tgeh spices in the bowl but do not add water. Make a dry rub then proceed to bake them until done.
