Egg Sandwich with Honey Vinaigrette Drizzle

Confession: I am a cooking show junkie. I can watch cooking shows till kingdom come. It just never gets boring…well, for me atleast :)). One of the most common things I see on Chopped is the use of vinaigrettes especially on Salads and stuff. Because I have no culinary training, I always turn to Uncle Google to break things down for me. Turns out it is not something complicated and can be made from nearly anything.

I love sweet and sour anything. So I made my vinaigrette using honey, apple cider vinegar and some oil to capture one of my favorite flavors. I was rushing somewhere and decided to make a sandwich to have on the go. After quickly taking my photos, I downded these sandwiches and boy, didn’t they just hit the right spots!!! If you are always on the go, or are going through one of those lazy days, this one is for you :)).

COOK TIME: 10MINUTES                                     SERVES: 2

Ingredients

3 eggs

1/2 a tomato

1 bowl of leftover minced beef

1/4 teaspoon of garam masala

1/2 green bell pepper, finely diced

2 slices of bread

1/2 an avocado, sliced

1/2 a tomato, thinely sliced

For the vinnaigrette:

2 teaspoons of honey

1 teaspoon of apple cider vinegar

2 teaspoons of vegetable oil

Method

Finely chop your chilli, green bell pepper and mince your ginger. Crack your eggs and put them in a bowl. Add the diced veggies and the garam spice and whisk them until they have just mixed. Ensure your hoho is diced really small so that you do not get a hard time whisking and also so that the egg mixes with everything else well.

Pour the egg onto a pan and take your minced beef and sprinkle it over the egg. Ensure you do this before the egg sets so that the minced meat effectively melds with the egg. Also, make sure the minced meat is not too runny as this will throw off the balance of the thickness of the whisked egg by making it runny as well.

As the omelette is cooking slice your tomatoes and put them in a bowl. In a separate bowl, put all the ingredients of the vinaigrette together and whisk them until they are mixed. Drizzle this over the tomatoes. I liked mine with a very generous drizzle, or should I say shower. Life is too short to hold back. #nom

Once the omelette is done, remove from heat and assemble your sandwich. Splash some extra vinaigrette in between the layes for extra yumminess. After you are done, dig in.

I must admit, I did not intend to eat the entire egg sandwich. Bu after one bite, I just could not stop. You can just imagine how sloppily I ate this, coz it was tasty, and I was avoiding the possibility of getting late to where it was I was going. As I told you here, I never get late.

The minced beef made this omelette extra tasty and extra delicious. The chili and the hoho amplifies all other flavors and this was all complimented by the freshness of the tomato in the amazing honey vinaigrette. Who said egg sandwiches are boring?!
