Chicken Curry

Nowadays I have been eating very little meat. Not for any particular reason, or any particular goal in mind, I just found myself having almost none in my servings  even in two weeks. But when I do feel like having some, I make sure I make it DELICIOUS! Now I am falling back in love with my meat and I am having plenty of lamb and chicken now. My current favorite ways of cooking my chicken are my kuku wa kupaka (if you have not tried out my recipe yet, what are you waiting for?) and chicken curry. I was shocked when I realized I have not shared this recipe with you guys yet, and decided this month would not end without you having a taste of this awesomeness. It is so easy to make, does not take mush time and it is explosively delicious, in true Kaluhi fashion. This is about to be your newest favorite!

PREP TIME:  24 HRS   COOK TIME:   40 MIN      SERVES: 5

Ingredients

5 chicken thighs

1 teaspoon of dried thyme

1 tablespoon of dried rosemary

6 cloves on minced garlic

3 tablespoon of African Kaya Sweet chili sauce

2 tablespoons of Apple Cider Vinegar

1 red onion, finely chopped

Coriander stems, chopped

1 teaspoon of minced ginger

3 bay leaves

1/2 a teaspoon of turmeric

1 tablespoon of curry powder

1 tablespoon of cumin

1 teaspoon of cinnamon

1 teaspoon of black pepper

1 tablespoon of garlic powder

1 tablespoon of tomato paste

3/4 tablespoon of garlic powder

1 cup of plain yoghurt

Salt to taste

Vegetable oil for frying

Method

In a bowl, place your chicken thighs. To this, add the rosemary, thyme, apple cider vinegar, garlic and the african kaya sweet chili sauce (now known as Mama Muthoni Sweet Chili Sauce). Mix this all up and the, cover and allow to marinate over night. Always remember, the longer you marinate, the better the flavors.

I got my African Kaya Sweet chili sauce (2022 post update: She rebranded to Mama Muthoni Foods but  the product is the same same stellar one!) from Wangeci who makes the sauces her self. I  was the perfect addition to my chicken curry for that extra kick. Check out this video to see which other brunch dish you can make with this sauce too.

Once marination is done, put the chicken to boil , and once done, set aside. if you prefer not to boil before cooking the curry, shallow frying them would be ok.

In another sufuria, add the red onion, fresh ginger, coriander stems, some salt and bay leaves. I bought my bay leaves from the supermarket spice aisle at about 70 bob a can.

Let this cook until fragrant, them add the tomato paste and all the spices. Mix them in and add 1/4 cup of hot water and let this cook down until everything is incorporated and thickened. The video shows that very well. Do not add an ocean because if you make watery soup at this point, you will not be able to fix it later. And we want a nice, thick, rich chicken curry anyway :)))

Add the boiled chicken followed by the plain yoghurt and let this cook until combined. Not vanilla/banana/chocolate, but plain yogurt. This should take about 10-15 minutes for everything to come together.

Once done, garnish with your dania leaves and prepare yourself psychologically for the tsunami of flavor you are about to experience. This. Is. Not. A. Drill!

Can we seriously first appreciate how amazing this chicken curry looks??? I had mine with rice upon my first serving, but later on had it with ugali in the evening and with chapati the following day! This beauty goes with everything!!!

Any chicken dish would not be complete without starting with a good marinade. And I am so glad I went with the five ingredients I chose, especially the sweet chili African Kaya sauce. It introduced a deeper, fuller flavor that one could not really put their finger on, but without doubt thoroughly enjoyed! The plain yoghurt not only thickened the mchuzi, but also tempered the heat of the pepper and the chili. This chicken curry was tender, spicy, flavorful and rich.

    Hi, quick question. I always try your recipes but I have a problem with the brand of spices that I buy. Most of them are not fragrant enough or are kinda fake (mathogothanio mix of unknown dust).       I do not mention brands because everyone has their own that thay personally prefer. What I like, may not be what you like. Secondly, I only mention brands that I am marketing. As for spices, imagine do not over think it. Do not over think. Curry powder for Tropical Heat, Nature’s Own, Zanzibar Spices, Orleys are all the same. I switch between them.What one chooses depends on their budget coz truly, the end product is the same! Do not over think, you will be ok.

      I tried several of them but I still go back to Tropical heat. Esp when it comes to ginger and turmeric i think they r the best so far.
      Otherwise u can buy in ration stores like in Ngara westy or parklands

    Made this for the second time today. Didn’t really enjoy it the first time, but only because i don’t like cumin’s sharp taste much. Personal preference kind of thing. So today i did 1/2 a teaspoon of cumin instead of the tablespoon in the recipe. Worked out really well. I was/still am so happy. I made it for my mum, we over ate and she just fell asleep there in the living room shortly after. Anyway, thank you for this. I’ve made a few other meals from here, the meatball tikka masala was my favorite so far until today. The garlic and lemon fish curry was amazing well.

    The photo has me seriously salivating. I’m definitely going to make this next week. Quick question, I’m always hesitant to use more than just a couple of spices in a meal because in my head I fear the flavours will overwhelm each other. Do you think this is a valid fear/concern?

      Flavors will be overwhelming if they are added without a plan- without playing off of each other and in the wrong portions. Zikiwekwa kiholela, it will be disgusting. Same way one can use just one spice, but if they add it in the wrong portions or to the wrong dish, it will be overwhelming or disgusting. Number of spices is ok, just follow instructions.

    I’ve tried this twice and I still don’t like it 🙁
    I think my problem is the yoghurt and the vinegar.

    I however always try your recipes and most work for me. Especially kuku wa kupaka and the coconut beans stew

      You do realize it makes no sense to not like something you have not even tried?? Anyway, I respect your dismissal. As for me, this is one of the top 2 recipes of 2018 and not a day goes by without someone trying it out and enjoying it. If you do not want to try it out, it is totally fine, do find another recipe that you like on the blog. As for me, I will keep making this, and keep on celebrating everyone who does as well and sends me pics and videos when they do.

    I made chicken curry yesterday, honestly I was never a fun of making or eating chicken in Currys the only chicken I enjoy is grilled, roasted, fried n such, no mchuzi in it.
    now I wish had seen this recipe but AL also make sure this have tasted esp when my buddies are around.

    I’m dying to try this out, but I really want to use the sweet chili sauce. I checked African Kaya’s website, but she’s no longer selling it. Do you know of a good substitute? I have Thai sweet chili sauce and wanted to see if you think it’s a good substitute.

    Here to comment N years later. The explosion of flavours is definitely out of this world. I’m glad i finally tried it. What i’d do differently next time is not boil the chicken, i think i overdid it slightly. Great recipe all the same!!!
