The school holidays are upon us and that means, those of us with siblings, the house is fuller, warmer and of course, noisier LOL! And as expected, one of the highlights of being back home is enjoying all the fantastic home food that cannot be recreated anywhere else. Remember how that was the ultimate joy of being home back during our boarding school days?? For my younger sisters who are home for the holidays, that is their MAIN joy of being home. I can’t blame them! They literally have a mental list of the things we (read my mum and/or me) need to make! One of my younger sisters was doing her rounds on Instagram and saw some pork ribs and decided that is what we MUST make during the weekend. Being the sweet, nice (sometimes overbearing, controlling, bossy) elder sister, I decided that Easter Sunday would be pork Sunday. Boy! Wasn’t I glad that my sister’s Kraving pushed me that direction! I gave you a sneak peek on my Twitter and Instagram and decided to give you this recipe today as opposed to next week because it is too bomb to hold on to any longer! Let me first start by saying, nyama choma induced commas are a very real thing. This past weekend, we had our very first Brothers of the Grill at Nairobi Arboretum. Judging from how this went, I think I will go for every other single one in the future. The very moment I entered the grounds, I could smell all the meat that was roasting from different restaurant stands and I just wanted to start eating. I am so so glad my expectations were exceeded! The the mood was right, the music was mellow and the food was more than enough. I am telling you we ATE!!! Nothing beats good food and lovely company! I now understood the meaning of this:
In my country it is almost an abomination to throw away left overs of any meal. In the Kenyan spirit of resourcefulness, all meals that are left over from the current meal are set aside to be eaten as part of or for the next meal. Wastefulness is totally discouraged in our culture. And I believe that is a totally fantastic thing.
But lets be honest, at times having left-overs over and over can sometimes be monotonous. Hence it is always advisable to change things up and add new flavors to and transform an already awesome meal. Following the Madaraka day celebrations, we had some left over nyama-choma. To make this richer and tastier, we usually turn this into a dry fry. The process of frying it tenderizes the meat further but it still retains that smokey flavor. The onions and the chilli enhance the flavor of the nyama choma meat so well. It is soo good, just typing this made me salivate.
