Fried Rice, Three Ways

Even for people who love being in the kitchen, sometimes, it is a bit exhausting. We all go through those moments we do not want to  stand too long in the kitchen cooking, but ironically still, ache to have something sooooo delicious. This is one of my all time favorite lazy meals, and fried rice is a close second! Besides it being a speedy meal, I really love how flexible this is and how wild one can go with experimentation and with different combinations! Whether veg of meaty, fried rice always comes through with flavor so strongly!

Today I want to share with you three of my all time favorite Fried rice recipes, and I hope you will fall in love with, not just one, but all three.

1. Pea & Brocolli Fried Rice

I love this particular recipe because of how beautifully light and filling it is. I loooooove broccoli and it almost always has to be a feature for all my fired rice recipes. I like adding peas as well for extra nutrients and flavor. And you are free to add any other veg you fancy.

PREP TIME: 10 min    COOK TIME:  8 min       SERVES: 1

Ingredients

1/2 a cup of Spring onion

1 teaspoon of grated ginger

1/2 a yellow hoho, diced

1/2 a green hoho, diced

1/2 a teaspoon turmeric

1/2 a teaspoon of oregano

4 cloves of garlic, minced

1 heaped cup of pre-cooked Amana Basmati Rice

Method

To your Pan that has oil and salt, add your spring onion, fresh thyme, the hohos, ginger and garlic. Cook this over  medium low heat until they soften and are fragrant.  After a few minutes add the oregano and turmeric so that they adequately cook down.

Then, add the peas and broccoli, both pre-cooked and give them a light sautee. Make sure they are not overdone so that they retain their green color and shape as well.  Add your Amani Basmati rice, toss this all up and once done, serve. Can you see how ‘moja-moja’ my rice is?!!!!

 

2. Thyme & Curry Mushroom Fried Rice

I love cooking with mushrooms because they are not only easy to prepare, but also because they take up flavor so immaculately! They are also so versatile and I find myself ever so often reaching for them when I want to prep some delicious fried rice that has full, earthy flavor. Paired with curry and thyme among other ingredients, this one will have you addicted!!

PREP TIME: 10 min     COOK TIME:  13 min       SERVES: 1

Ingredients

1 cup of button mushrooms

3 cloves of garlic, minced

1/2 a red onion, diced

1/2 a teaspoon of thyme

1/2 a teaspoon of curry powder

2 tablespoons of Soy sauce

1/2 a teaspoon of cumin

1/2 a cup of dania stems

1 heaped cup of Amana Basmati Rice

Method

First to go to your pan that has some salt and oil, add the red onion, thyme, dania stems and the garlic. Allow this to cook down until fragrant and soft, being careful not to burn the garlic since it tends to be bitter when burnt. There after, add the mushrooms, the spices, then 1 tablespoon of soy sauce.

Let these cook on high heat until the mushrooms brown, slightly shrink and soften.

Add your Amana Basmati Rice, followed by another tablespoon of soy sauce.  Can we take a moment and appreciate how beautifully singular and poppin’ my rice is!!! Oh the wonders one can achieve with the right brand and the right techniques!

Toss everything up and once everything is coated, garnish with fresh dania leaves and serve.

For me, it is always Amana.

3.  Rosemary Chicken Fried Rice

PREP TIME: 15 min     COOK TIME: 15 min        SERVES: 1

Ingredients

1 palm sized chicken breast, cut into strips

1 tablespoon of dried rosemary

1/2 a red onion, diced

1/2 a cup of dania Stems

4 cloves of garlic

1 tablespoon of tomato paste

1 teaspoon of paprika

2 cinnamon Sticks (or 1/2 a teaspoon of ground cinnamon)

2 Bay leaves

1/2 a teaspoon of black pepper

1 heaped cup of pre-cooked Amana Basmati Rice

Method

To your pan that has some oil and salt, add the red onion, dania stems, garlic and rosemary, together with the whole dried spices: cinnamon and bay leaves. I love my dania leaves as part of my starter ingredients and this was no different.

The once cooked and softened and super fragrant, add the chicken which you have cut up to strips, plus the tomato paste and the paprika and cumin. The paprika is a key spice and the one that imparts its red color to the dish. As with every single spice I use in my cooking, I bought my paprika form the supermarket at about 160 bob for the large can.

Mix all this and allow it to cook until the chicken is completely cooked through and the spices cooked down. Because the chicken is boneless and cut to strips, ti will take less than 8 minutes to cook through. Thereafter, add your Amani Basmati Rice and toss it all up until completely combined and the rice coated in all the juicy goodness!

Can you note the singular rice with my rosemary fried rice as well? Nothing short of perfection!!! So which one will it be guys? Which one of these three are you gonna give a try? Is it the light fresh pea and broccoli fried rice? Or are you gravitating more towards the full flavored thyme and curry mushroom fried rice? Or perhaps you are feelin’ the meaty and herby rosemary fried rice? Which ever one you try, you are going to love it!

    Greetings from Finland, far north! 🙂 Tried today your mushroom fried rice and it was delicious! Next time gonna try the broccoli one.
    My husband doesn’t have much cooking experience, but this was so easy that I assume he could cook fried rice too.
    I’ll continue searching for easy recipes for him from your page (and some not-so-easy for me too :D).

    One question about the last recipe though: since my husband is a vegetarian, what do you think: would tofu also work instead of chicken?

      Tofu would be extremely different in taste, May I suggest you try the pea one or the mushroom one- both of which are vegeterian? 🙂

      Shop in a well stocked supermarket. In my experience ALL supermarkets have spices, hata nikienda ushago western, spices are stocked.

      a salad, veggies, a gravy, grilled meat…. Anything! Truly anyhting or even on it’s own. But to know what to serve it with, ask yourself, what does your dad like? What would he like it with? Because you know him best, you know what to serve it for him best.
