French Toast Magic

French toast brings me fond memories of my holidays back in primary school. Once a week, my mother would make these for my sisters and I. I made sure I woke up very early on those mornings so that I do not miss these babies!! My mother used milk and eggs only, however in my recipe, I added orange zest, cinnamon, nutmeg and some orange marmalade. There is no better way to start your day than with this tangy meal! They are not only delicious, but they are very easy to make.

Ingredients:

2 Eggs

1/4 cup of milk

1/2 teaspoon of ground nutmeg

1 teaspoon of ground cinnamon

Freshly grated orange zest

Vanilla Extract (optional)

*makes four toast slices

I guess you have noticed that I never included salt.

This is because I wanted my star ingredients, the cinnamon and the zest, to stand out. Also, salt has a tendency to dry out savory dishes so I excluded it because I wanted these toasts to be moist. Lastly, the orange marmalade spread served with this packs a punch of flavor hence salt is not necessary. However if you feel you need some salt as per your individual taste, go ahead and add some :).

Method

1. Break the eggs into a container and whisk them. Add the milk and whisk until you achieve a light even consistency. If you have vanilla extract, add it at this stage.

2. Then, add the cinnamon, nutmeg and orange zest and whisk for about 30 seconds so that all the ingredients blend.

3. Once you are done, pour the mixture into a medium sized baking tray or any other surface that will allow you to soak your slices of bread.

4. Take your bread and soak it in the mixture. I used whole meal bread (pre-sliced) because its heavier and it absorbs the mixture better.

5. Let the bread sit for about 30 seconds then flip them so than both sides are coated. It is important to let them soak for a while so that they absorb the mixture and when you cook them, they will be super moist inside.

And they smell so fruity because of the orange zest and the cinnamon adds a very warm  and inviting aroma to them.

6. After another 30 seconds, put the slices onto a buttered pan which is on low heat. Let the outside cook then flip. Once this is done, increase the heat to medium so that the inside cooks and the outside gets a charming golden char. It is important to start with low heat first then increase gradually so that the inside cooks. If you begin with high heat, the outside will burn fast and the inside will remain soggy.

7. Poke with your fork to see if the toast is done on the inside. When you poke with your fork and it comes out clean, then your meal is ready to go!

8. Serve on your plate,spread some marmalade and dig in!
