Coconut and Chocolate Chip Drop Scones

It has been an exciting past week. Thanks to you guys, Kaluhi’s Kitchen had the honor of being crowned as the best food blog 2016 in Kenya. Drop scones have always reminded me of my high school holidays. Mom used to whip some up for us so that we get to enjoy good home food before we returned back. Drop scones, like many other foods, can be prepared in so many different ways. I have done several posts on the same in the past, included another one in my ebook and now, I have an exciting coconut and chocolate chip drop scone recipe for you. Pear and Nutmeg Pancakes

My elder sister Sieva LOVES pears. She loves pears with the same intensity that I love my mangoes, so you can imagine how much she loves her pears. Growing up, I never really enjoyed pears. I watched Sieva eat her pears with such deep enjoyment and theatrics that accompany chowing down of good food. As I grew up and became a lot more open minded to trying our new things, I came to really love this cute little fruit. Now that they are in season, I am also trying to incorporate them in as many meals as I can. I am having plenty of fun in the process :))

Red Onion and Button Mushroom Omelette

Am I the only one who still gets super excited when parents return home from upcountry and they bring lots of fresh FOOD with them? Maybe its a foodie thing, or maybe its just me LOL. My parents always bring fresh produce with them since it is cheaper there and overall of better health and quality. The best honey we have is always from Maragoli and also, the best mushrooms I have ever tasted were from Maragoli. ‘Ovwova’, as we call them, are eaten quite often in shagz. I was so scared about giving them a try but after my mum made them and I had my first taste, I was sold! And that was the day my love affair with mushrooms started. I try add them to nearly anything and to my surprise, they go with almost anything in my opinion.

When I have eggs for breakfast, I like mine scrambled. But when I incorporate other things, I like making an omelette.. Oh! This button mushroom and red onion omelette was so so so good I am literally drooling as I type this out. And in true #KK fashion, it was so easy to whip up 🙂

Mango and Lime Smoothie Bowl

I love mangoes. I feel like I have spent the past two months saying this. But can you really blame me. It turns out than many of you also share my love for mangoes as indicated in this Instagram post. I try have them after all three meals whenever I can and incorporate them in meals too. And for me, there is no other way than channeling the sweetness of this beautiful fruit than in a smoothie bowl.

One of my Instagram (@lizbettynally) followers requested for a smoothie. I had been toying around with this idea and I decided to finally give it a go. My youngest sister, Musimbi, had this and she loved it so much she wanted to have it every day as a post-work out meal. Trust me, it looks as good as it tastes.

Amarula Crepes with Macerated Strawberries

I love the freshness of new years. Of new days. Of  newly born babies. Of new everything! The smell of new is drenched in hope, possibility and optimism. There is an abundance of positive energy at the wake of this infant year. Can you feel it? I sure am channeling it and making the most of it now. So far, this year is my best yet! I read this article yesterday at 7 a.m, and the author stated something that is actually true. Each year, people start with so much enthusiasm but end up being predictable and playing small; just as they have in all past years. I have sought to make this year BIG. No special resolutions, just deliberate action towards my dreams. You should too! Will you join me in conquering the world ? :))

Today’s recipe was what I was meant to make on the day I made these pancakes. I had the concept for amarula crepes, but I did not have creme liqueur or strawberries and felt too lazy to go get some. After the holidays and with all the guests gone, plenty of alcohol is usually still sitting around. I then remembered this recipe and decided to bring it to life. My amarula pancakes and macerated strawberries are the very definition of perfect. Read on to know what a proper grown up brunch should look and taste like #NOM

Custard Pancakes with Tangerine Syrup

Boy, doesn’t it feel good to slow down! After dishing out 8 new recipes each month this year religiously and almost always being present on social media, I feel it is only fair to slow down and give myself a break. I will be more silent on social media this month (only this month), but that does not mean I have been wiped off the face of the earth. I am simply rejuvenating and getting the creative juices flowing once more. I mean isn’t December the month of relaxation after all?!

I made these pancakes early last month. I have no idea what inspired this but the first try was  the mother of all flops. I adjusted my proportions and tried again and the second time with plenty of success. I threw in some tangerine syrup just because! This is absolutely tasty and you must try this out too.

Pumpkin and Cardamom French toast

When my sisters and I were little girls, my mother had employed a help named Maggie to assist her with the house hold chores and help her keep an eye on her hyper active girls. I always remember how we sometimes used to stress Maggie when we would mess the house LOL, but she still enjoyed having us around more so during the holidays. I remember the first time I tasted pumpkin chapati. She was the one who made them for us under the guidance of my mum. Like many kids, we never liked eating pumpkin. Together with my mum they tried various ways of sneaking this into our food and they finally succeeded when we liked pumpkin chapati they made for us.

There are so many ways of having your pumpkin. I asked you guys on Instagram how you liked having your pumpkin and it was evident how there are so many ways to creatively have your pumpkin. Today, I give you one of my now favorite breakfast meals: Pumpkin and Cardamom french toast.
