Iliki Banana Pancakes

The simplest foods are often the most comforting! I love how a biting into a mango feels like sunshine in my face. I love how creaminess of avocado and githeri feels like melty body butter on my skin. I love how labania za maziwa feel like a shower of forehead kisses. I love how chai masala feels like comfortable, familiar excitement. And I love how pancakes- specifically banana pancakes feel like staying in bed longer on a slow Sunday morning!

Banana pancakes are so simple to make, and are one of my favorite things to have. I always switch it up when I make mine, but my faaaaavorite way to enjoy them is with my favorite warm spice taking center stage- as iliki banana pancakes. You will fall in love with this one too!

Orange Zest Funfetti Pancakes

I get inspiration for my recipes from almost anything, but usually from things that tug my heartstrings. Today’s recipe was inspired by personalities that embody and radiate sunshine and joy. Those are the personalities of my two young cousins Kadesa, 8 and Mudola, 4. They make me so happy and I just love hanging around them. Last time when they came over, I prepared this dish. This time round I made this, though after they had left. I feel these funfetti pancakes fun, warm  and happy feel captures what I feel when I am around these two girls.

I made pancakes last time with raisins and some orange syrup and they were explosively fantastic. This time round, I decided to add funfetti, some freshly squeezed orange juice and a milky syrup. They were so so good. If you loved the raisin pancakes, you will love these funfetti pancakes.

Raisin Pancakes with Orange Syrup

I usually love having  french-style pancakes, crepes, for breakfast because they are light and my sisters and I finally landed on the perfect ingredient combination. The most common pancakes however, are the thicker, American-style pancakes. I can count the number of times I have had these style of pancakes. In the past, I have never really been a fan of them because I personally found them a little bit heavy. To fix what I did not like, I experimented with some ingredients and I have finally landed on the perfect pancake recipe.

One of my friends has been asking for a pancake recipe on Instagram literally since the day I opened my account   😀 and this is one recipe I am proud to share because I know just how good it is. My sisters loved it, and I know you will too 🙂
