Iliki Banana Pancakes

The simplest foods are often the most comforting! I love how a biting into a mango feels like sunshine in my face. I love how creaminess of avocado and githeri feels like melty body butter on my skin. I love how labania za maziwa feel like a shower of forehead kisses. I love how chai masala feels like comfortable, familiar excitement. And I love how pancakes- specifically banana pancakes feel like staying in bed longer on a slow Sunday morning!

Banana pancakes are so simple to make, and are one of my favorite things to have. I always switch it up when I make mine, but my faaaaavorite way to enjoy them is with my favorite warm spice taking center stage- as iliki banana pancakes. You will fall in love with this one too!

Iliki Pancakes with Pear Caramel Sauce

Change. There is so much beauty in change. We bid goodbye to one amazing thing and welcome another different, but equally beautiful one too. We are {verrrry} slowly moving away from gloriously sunny weather that I love, and awaiting the cosy rainy season that I love too :D. I am without doubt thoroughly sad that mango season is now over, but pear season is right here with us! Besides enjoying this amazing fruit as it is, this gives us a chance to enjoy it in our cooking in all innovative ways we can! As the second pear recipe for this year’s pear season, we are getting into my iliki pancakes with a super easy to make pear caramel sauce.

Iliki & Coconut White Chocolate Trufles

White. A color that represents innocence and purity. Or at least that is what we have been conditioned to believe LOL. Perception. It has a strong influence on our entire outlook and even decisions. Why cant blue represent innocence and green represent purity? I have realized this past weekend how much we have been conditioned to think. And I am bit by bit breaking away from it and deciding whatever it is I want to represent for me.

When it comes to white food, it can easily be thought as bland. White may invoke feelings of single note flavors. Think Ugali kavu or plain rice.  But white food or snacks can just as easily delicious. As I always say, it is all about making the right combinations. This month, the Onja food bloggers challenge was ‘white’. Let me not lie, it was a challenge indeed. I decided to break the mold and make something delicious, full of flavor and easy to make. Today I give you my nutty coconut white chocolate trufles.
