I come alive in Sunny weather!! Not only do I find it easier and more fun to dress when it’s sunny, I overall am more creative and efficient when the land is bathed in the glorious sunny rays. We are lucky that we live in a country that this overall sunny majority of the year. I have never experience (actual) winter, but besides the low temperatures, I honestly cannot handle that it gets dark so early! Yes, summer literally has endless daytime but winter has the opposite and I would shrivel! I love heat! I love sunshine! I love clear skies!

To enjoy and celebrate this month and the coming sunny weeks, some delicious raspberry and ginger cocktail! You will love this!

PREP TIME: 10min    MAKE TIME: 10 min        SERVES: 3

Ingredients

1 (125 g) punnet of raspberries

1/4 cup of whiskey

1/2 a cup of soda water

1 teaspoon of minced ginger

1/2 a teaspoon of finely chopped fresh rosemary

1/2 a teaspoon of cinnamon

2 tablespoons of honey

Method

In your sufuria, add the raspberries followed by some water. Follow this by the cinnamon, honey, rosemary and ginger. Mix it in while simultaneously mashing them as i showed you in the video. It will not take too much effort, but it will just come apart pretty easily because raspberries are just that soft.

Let it simmer for about 10 minutes until thick like jam. Once done, set aside and allow to cool. It will need to cool first because the cocktail will have ice and if the compote is hot, the ice will melt and your cocktail will be warm (yuck!) too!

Once cool, add the raspberry compote in a shaker together with the whiskey and shake until combined. You can transform this into a mocktail by leaving out the alcohol. Also, in place of whiskey, gin, rum or vodka can work. Add it into a glass – your glass with some ice and rosemary sprigs and frozen raspberries. Top it with some soda water and serve immediately. How bomb does this look? I know you can imagine this refreshing beauty trickling down your throat sindio?

I love the fruitiness of the raspberries, how their sweetness was enhanced by the honey and complimented by the cinnamon. I love how the ginger added some complexity and the rosemary introduced some freshness. I loved the kick of the whiskey as well!! This raspberry ginger cocktail is pure perfection!
