Mango Olive Halloumi Salad with a Ginger Honey Dressing

Happy New Month my loves! I hope March has started off well! For me, March has been consistently difficult since 2019, but I am hoping for tides to change and for this year’s to bring with it joy and peace- coz god knows I deserve it! As I open up my cup to grace, wealth and love, I appreciate everything I can because life really is about the small moments! I am appreciating the beautiful fulfilment that comes form hard work. I am appreciating the sweltering weather which you guys know I love. I am appreciating the abundance of mangoes! I am appreciating life! I am appreciating great food.

Today I am sharing with you a salad that brough me so much happiness! I loved having this and it made for such a delightful lunch. I wanted to experience sweetness, abit of saltiness, some freshness too and this beaut had all that in a bowlful. The best salads in the universe are found in Kaluhi’s Kitchen and today we add yet another glorious one to our catalogue.

PREP TIME: 30 min    MAKE TIME: 10 min         SERVES: 1

Ingredients

For the dressing;

6 tablespoons of olive oil

3 tablespoons of balsamic vinegar

1 tablespoon of minced ginger

3 tablespoons of honey

1 tablespoon of soy sauce

 

For the body:

400 g of lettuce

1 large mango cheek, cubed

¼ cup of black olives

½ a tomato, sliced

4 basil leaves, chopped

½ cob of sweetcorn

1 cucumber, cubed

80g of halloumi

Method

The dressing

For every salad we make, we always have to pair it with a glorious dressing that brings out its flavors. For this salad, a ginger honey dressing was perfect. The warm notes of the ginger in particular would pair well with the mango in the body and make for a delightful bite.

To compose it, place all the ingredients of the dressing into a container and give a good shake. Once combined, set aside.

As explained in the video, the ideal ratio of oil : vinegar is 2:1. Keep that in mind as you adjust your ingredients upwards. I used balsamic vinegar for this, but you can use any other vinegar except white vinegar.

You can make the dressing in advance and it can stay fresh in your fridge for up to two weeks.

For the body

This is the main part of the salad (I know you know but I like to repeat stuff lol). For the fresh ingredients, I went for lettuce, cucumber, tomatoes and fresh basil. The lettuce I chose is purple lettuce however the green variety would work well too.

Preparation of the cucumber is important: Make sure you core and discard the seeds. You will only need the solid part as if the seedy, soft part is included, your salad will become watery by the time you are eating.

Char your sweet corn and then slice the seeds off the cob. This adds a gorgeous smokiness to the salad.

Along with the sweetcorn, mango adds some yummy sweetness. They are still very abundant this time of year so lean in and eat as many as you can!

The olives and the halloumi add some saltiness to the salad. The halloumi alone can bring in the salt element, but believe me the olives tie everything together. I got mine from the carrefour deli where a handful went for about 40 shillings.

Dump all the ingredients of the body into a bowl (except the halloumi) and give them a quick toss.

For the halloumi

For every salad I make, I always have to add an element of protein. This allows the salad to not only be an interesting mouthful but also get really filling as well. I had some halloumi in my fridge so this had to be part of the salad.

You can prepare halloumi in different ways: grill, fry, or roast. Today I chose the fastest for me and that was an open flame roast. Speedy, easy and also adds the most delicious smokiness to the cheese!

With everything now done, pour the dressing over  the body and give it another toss.

Once ready, plate the dressed body of the salad, place your hot smoky halloumi on top and serve.

The flavors were divinely perfect! The sweetness of the mango went so so well with that of the sweetcorn. The freshness of the cucumber, mango and lettuce tied everything together. The richness of the halloumi was much welcome and the saltiness of the olives cut through the sweet honey ginger dressing. I am drooling as I write this; my body remembers the perfect flavors!
