Labania za Maziwa

My boarding school was one of those super strict, super structured, super rigid catholic boarding schools. I often say, if it weren’t for my friends, who are my forever friends, and for the company they offered, I would have gone crazy. Most rules never made sense, but you know, we just went with it. We were not allowed to carry much junk food, which I personally did not mind since I have never been a sweet tooth anyway. But what we had ,we made sure to make use of.  Most people went overboard with milk powder, making biscuit sandwiches with them , heck even licking it as it was. We were desperate! 😀 It was eventually banned as well. I decided to get a pack and relieve those days. It did not taste as good as it did back them, but since I was not going to waste it, I decided to prepare a snack with them.

Labania za maziwa can be classified as a sweet. They are chewy in texture, just as a fudge would be. They are easy to make right at home, which is always a plus since you can control how much sugar goes into them. This is what we are getting into today and I am so sure you will love them as much as I do! <3

Labania za Maziwa Ingredients

1 cup of milk powder

1/2 a cup of oat flour

1 teaspoon of ground cardamom

1/2 a teaspoon of nutmeg

6 tablespoons of sugar

1 cup of water

2 tablespoons of butter

Rolled oats for garnish

Method

Sieve the milk powder and the oat flour together. This combines the two flours. Set aside and proceed to the next steps. All purpose flour is usually used, but I swapped that for oat flour as I felt it would just taste better.

In a sufuria, add the sugar and water followed by the cardamom and nutmeg. Usually, the sugar and water are in the same ratios (usually 1 cup of sugar to 1 cup of water), but since I did not want mine to be excessively sweet, I reduced the sugar.

Cardamom and nutmeg are perfectly complimentary to each other so they were my go to. In retrospect, I wish I added clove too. You may add cinnamon as well.  Let this simmer to a boil then mix in your butter. It should turn syrupy and with the exact same consistency as honey. This picture is blurry AF but it is very very very clear in the video. Make sure you watch the video to know the consistency you need to get.

There after, add the milk powder +oat flour mixture that we made in the beginning and immediately start mixing it in. Do not skip a beat!

It may be a bit lumpy, however I find that combining the two flours largely eliminates this problem. Remove any lumps if any occur though. Once the mixture turns ball like and pulls away from the sufuria, it is ready. Remove it from the heat.

Place this ‘ball mixture’ on a greased container (or a mould!), level it with a spoon and press some rolled oats over the top as this vid guids you. You can garnish with anything really, I just preferred oats. You can also skip the garnish of you so please.

Once leveled, let it cool for about 30 minutes. Once cooled and solidified, cut them into any shape you want then serve.

I cut mine into rectangles of about 1 by 2 inches with a thickness of 2 cm. You can make them as thick as you want <3 I fancied mine thin as that makes them easier to pack and also not too overwhelming while eating.

Munch away!

These chewy, mildly sweet, milky, spicy treats are about to be your new guilty pleasure! All the flavors come through in perfect harmony and the textural contrast provided by the rolled oats makes everything all the more amazing!

These would be perfect to snack on at home when you are doing a lot of nothing, during a busy work day, or even for your kids if you, like many parents are weaning them off commercially made sweets. You can even make a batch, wrap it pretty and include it as part of a friends’ or neighbours’ fresh produce gift!

Either way, you are going to really love this!

    that is very informative and useful, I just wanted to know under the same recipie I want to add ground peanuts, how do I go about it? At what stage do I need to add the peanut powder? Is it together with the oat flour and milk powder? thank you.

      Maybe use peanut powder but for whole ones, not sure how well those would be incorporated in
