coffee crepes with nutty yogurt cream

What better way to be woken up than to the sweet aroma of something delicious cooking!? And nothing won’t ever get me out of bed faster than the aroma of something good cooking. I like giving myself a break from always being the one cooking. Luckily in our home everyone likes cooking. So in the morning, I like treating myself to the delicious things my mummy and sisters make for us.

My elder sister Sieva likes making crepes for breakfast. My eldest sister, Cheredi, once added freshly grated coconut to hers sometime back and they were great. I decided to add my own twist to the same and in the process made what the gods would eat for breakfast. This was that good! I was abit anxious about how it would turn out but was pleased when it came out great. Want to start your day on the right foot? This is how :))

Coffee Crepes Ingredients

1 cup of flour

5 tablespoons of sugar

1 teaspoon of instant cocoa

1 teaspoon of coffee

1 egg

1 cup of milk

For the creme

5 tablespoons of plain yoghurt

3 teaspoons of sugar

1/2 teaspoon of coffee

Method

Begin with the sauce. Crush the nuts until they are just broken. Do not pulverize them.  Take half of the nuts, the yoghurt the coffee and sugar and mix them in a bowl. Set it aside and begin working on your crepes

Begin by mixing the dry ingredients: flour, coffee and instant chocolate. In a separate bowl,  whisk the egg and the sugar until it turns pale yellow. To this, add the dry ingredients and milk bit by bit until you get the consistency of yoghurt.

Take scoops of the batter and ladle onto a hot frying pan. Tilt the pan in a circular motion and after the batter sets, return it to the heat.

Allow each side to have two minutes on the heat.Once they are done, plate them.

Take your already ready cream and drizzle it over the crepes. Sprinkle the remaining nuts over the sauce on the crepes. Then, you can go ahead and dig in :))

The coffee taste stands out, yet it is not bitter. The nutty sauce has the smoothness of the  dairy and the pleasant nutty texture of the groundnuts. Together with the coffee crepes, it is nothing short of heaven!

    I did ask about the popcorn recipe haven’t gotten a reply yet

      Might I ask, where do you share my recipes? I hope you leave my link and give due credit to avoid any problems :)). As for popcorn, for me its just straight forward. Put your seeds in oil, pop them then add whatever ypu want to them afterwards (cheese, chilli, honey e.t) I am not keen on covering junkfood on my blog though
