Thyme Beef Burger with Passion Habanero BBQ Sauce

“Na kunanukia!!!! Zimeiva?”  (“They smell great! Are they done?”) My sister yelled form the stair case as she made her way to the kitchen where I was. I was not really in the mood for cooking because of cramps, but my sister pushed me and after some pain killers I decided to make something indulgent for both of us. Good food makes everything better right? And I had no regrets!!! Step after step after step and few moments later, there you are sinking your teeth into something juicy and delicious!!!The best burgers are those that we make at home. That is when you can customize  flavors according to your preference. Aroma of herbs filled the air. Sound of a sharp sear made me salivate.  And your next favorite burger is my thyme beef burger with my passion fruit bbq sauce <3 <3

PREP TIME: 15MIN    COOK TIME: 40MIN        SERVES: 3

Ingredients

For the patty:

400g of minced beef

1 teaspoon of dried thyme

1 tablespoon of garlic powder (or 8 cloves of minced garlic)

1/2 a cup of finely chopped coriander

1 teaspoon of chili flakes

Sal to taste

 

For the sauce

1 red onion, finely chopped

4 cloves of garlic, minced

1 cup of ketchup

1 cup of fresh passion juice

1 tablespoon pf honey

1 tablespoon of apple cider vinegar

 

Other ingredients

3buns

Dania

Tomato, sliced

Cheese

White onion

Method

Start first with the sauce :)). Core your passion fruit and proceed to blend them.

For the sauce, you will need to use FRESH passion fruit juice and to maximize of their flavor, you have to blend them. Blending also makes sure you do not have the hard seeds in the sauce which make the eating experience unpleasant, but rather gives you a smooth silky sauce with the full flavor of passion <3. Do not make the sauce with the seeds.

Once blended, sieve it to separate the fresh juice from any residue and set the it aside for later.

In a sufuria, add the garlic and onion. Cook this until fragrant and be careful not to burn the garlic as the sauce will become bitter. Add the ketchup (NOT TOMATO SAUCE), the honey/brown sugar, apple cider vinegar and chili.

I used chili by kez organics however you can use regular fresh chili diced up really small. Let this simmer for about 4 minutes then add your freshly prepared passion juice. My video shows you exactly how!  Mix it in and let it cook down for about 10 minutes for all the flavors to meld and for the sauce to thicken.

Do not add too much of the juice as you are making a sauce and not a soup. Take it easy boo! Once done, set this aside and lets get started on our pattys.

In a bowl, add your minced beef, finely chopped coriander, garlic powder (or 7 cloves of freshly minced garlic), thyme, salt and chili flakes.

Mix it all up until combined. Shape it into your patties, about 5-7 cm thick and proceed to fry them until cooked as per your preference.

As that is going, cook your white onion until caramelized. Caramelized onions are ALWAYS perfect with beef burgers and I just had to include them in mine as well! If you want to be exxxxtra, you can caramelize the onions in dry white wine. I had no wine so I just did a normal medium heat sautee.

Once everything is done, let’s go ahead and assemble the burger! For me it has always been, and as I have shown in this video:  cheese first, then patty, then the sauce, the caramelized onions, fresh tomatoes and dania and finally the top bun. I bought these super soft, buttery, buns from CarreFour. I chose ones with black sesame seeds for a change as opposed to the normal sesame seeds :)). Their buns, in my opinion, are the best since they are not dense, not crumbly and not chewy.

I love the contrast between moderately sweet passion fruit bbq sauce with heat of chili, creaminess of the cheese and the meaty juicy and herby goodness that this burger embodies. All perfect flavors in one. A good burger will cure almost everything, and this is what you need in your life honey.
