Sweet and Sour Pork with Pineapple Salsa

Have you ever made a meal and it turned out so hideous that you are afraid to eat it even if you made it yourself? I know in one way or another you can relate. I had attempted to make a certain pork recipe I found on Daily Mail as it was. It looked good, but when I read through I didn’t quite feel it was right. I tried it nonetheless and developed a disaster of the millenium. LOL!

I decided to try again, but this time with a recipe iI myself developed. Not to brag but, my pork recipe was phenomenal. Sometimes it is just better to trust your gut (see what I did there ;)) and cook how you feel best. Knowing that pork goes so well with sweet flavors, I decided to play this characteristic up and made a really delicious sweet and sour sauce and a pineapple salsa to accompany it. Ready for something super delicious and super easy? Try my sweet and sour pork.

Ingredients

For the marinade

1/2 KG of pork

A large pinch of salt

1 tablespoon of maize flour

¼tsp bicarbonate of soda

2 clove of garlic, finely diced

Fresh pineapple minced/3 large passion fruits

 

For the sauce

1 tablespoon of  worschestershire sauce

3 tablespoons of sugar

5 tablespoons of apple cider vinegar

2 teaspoons of  tomato paste

2 large tomatoes, pureed

Where can you get your worcestershire sauce? From any good supermarket. There are several brands ranging from KES 200 to KES. 450, depending on the brand you choose. It serves the purpose of thickening the sauce and adding a deeper color.

 

For the pineapple salsa

1/4 pineapple, cubed

Fresh coriander, finely chopped

1/4 teaspoon of cayenne pepper

1/2 red onion, finely chopped

 

Method

Chop up your pork. Put it in a dish and add all the marinade ingredients. Mix all of them in and let this marinate for 6-18 hours. I let mine marinate overnight. You can use either pineapple or passion fruit. I used what I had at hand at the time-passion fruit.

Once that is done, put this to boil with all the contents of the marinate and 1 cup of water of beef stock.

While that is going you can prepare the pineapple salsa. Chop up everything and put in a bowl. Mix it all up and allow it to sit for a while. This allows all the juices to seep out and for everything to blend well.  Set it aside.

Go easy on the cayenne. Begin with a very small quantity. Mix then taste. If it is not hot enough for you, add bit by bit till you feel its just right. You can always add more heat, but its difficult to remove too much spice once added. Start small. Also, ensure your pineapple is very ripe and very sweet. That way you will be able to balance the chilli and the sweet.

After the pork had boiled and become tender, remove from the heat and set aside.

For the sauce, add all the ingredients in a frying pan together with a cup of water. Let this simmer for 15-20 minutes. This allows it to thicken and all the flavors to develop.

Then add the pork,mix and let this simmer for about 7-10 minutes. It is at this stage that it will change from just pork to sweet and sour pork.

Serve the sweet and sour pork  together with the pineapple salsa together with your favorite starch.

      Hey Cici :).Yes you can, but you will not get the desired thickness. I feel if you can get soy sauce, you can get worcestershire sauce since they are in the same section and retail at around the same price. But if you personally do not like worcestershire sauce, you can give soy sauce a shot…

      Karibu to the KK Fam. We all start from somewhere and we all make blunders, the trick is never to give up and exploring new things. I have a chapati recipe, you can find it on the blog. It explains the steps each at a time. Start small and build confidence from there. :))

    Hey, I tried the recipe, I must have done something to give me my disastrous outcome, first I did not know how much maize flour to use and secondly, how long to boil the marinated pork before mixing with the sauce. And finally I bought worcestershire sauce and dont know how else to use it. About the marinate it took 16 hrs. Thanks.

    The outcome was not as pictured here but the pork disappeared and became soup

      Hey Jeda, sorry about the outcome. But it is through mistakes that we learn. Lets go step by step to see what went wrong. First let me ask, do you boil meat before cooking in your everyday cooking? What went wrong during the boiling stage? Then, what was the quantity of your pork? Finally, how much maize flour did you use? Answer these then i’ll hopefully know what went wrong :))

        Hi, thanks for the response.yes I do boil meat before cooking. The Pork was half a kg, and used 4 tablespoon of maize flour. After 16 hrs I placed the marinated pork and added half a cup of water and boiled for 15 minutes, then in a different pan I made the sauce the poured in the pork.

          I also had 1/2 kg of pork, and I used 1 tbs of corn flour as I had written in the recipe. You had the same amount of pork, but you used a different amount of corn flour (4 tbs)…If I may ask, why?
          I did not give a specific amount of time for boiling the pork. You know it is boiled when it is well-done i.e not red anymore. Was 15 min adequate?
          Which ingredients did you use in your marinade?
          You have also said the pork disappeared and became soup… I am sorry but I do not know what may have caused that to be honest. But either you boiled it too long till it became stringy or… I really don’t know what else can make pork just disappear in the sauce.

            Will give it another trial, I thought it dissolved coz of bicarbonate soda. Good news is today I have prepared earth and fire potatoes wedges and the outcome was wonderful, tasty and nice.
            Tommy morning I plan to cook the nutmeg drop scones for breakfast, at this rate I will nickname my kitchen Kk

    hey,that food looks delicious..what amount of pineapple should i put for marinating the pork overnite,and should the pineapple be diced into cubes or blended?how does one go about it, not a fan of passion fruit, so pineapple works well for me..

      The amount of pineapple will depend on the amount of meat you want to use? How much pork do you want to use?
      And if you use pineapple, you must blend it so that you make the most of their juices.

      Yes you can. Alternatively, you can instead substitute it with chilli powder, or finely diced fresh chilli to give the salsa the spicy kick it needs.

      It will make a slight difference but you can still use it

      It is safe to double everything, but remember not always. For this recipe, double everything but remeber to taste as you go along and make adjustments as required and as per your personal taste. Don’t doubt your own judgment :))

    Hi what if i choose to completely omit the Worcestershire sauce what else do you suggest as a substitute cause I can’t seem to find it in Nakumatt stores!

      It tenderizes the pork. You can choose to skip it, but there could be a slight taste and tenderness difference

    Made this pork for dinner tonight with kachumbari instead of the salsa and it was sooo tasty!! Supermarket was out of Worcestershire so I used soy sauce with a dash of cayenne for the heat. The pork was so tender and juicy, really delicious. Next time I’ll try with pineapple just to compare.
