Do you ever wake up and just feel like cooking nice things because the day looks beautiful and has started really well? I do not know if I am the only one who feels this… But on the particular day I made this dish, I woke up feeling really up beat. The sun was shining so bright outside, Ngong hills as seen from our kitchen window looking as majestic as always and the morning air was crisp and clean. The day ahead looked really promising. I decided to make the day even more fantastic by having a very good first meal of the day.
I decided to have scrambled eggs for breakfast, and you know, as usual, these were not just any normal scrambled eggs. I decided to play around with my pantry ingredients and came up with the most delicious scrambled eggs with the most spectacular flavors and amazing textures. Start your day on the right foot with my out-of-the-world sesame seed and ginger scrambled eggs.

Ingredients for my Scrambled Eggs
1/2 red onion, finely sliced
1/2 green bell pepper finely diced.
1/2 of a thumb sized root of ginger
3 cloves of garlic
2 table spoons of sesame seeds
Salt and pepper to taste
Vegetable oil for frying
Finely slice your onion and your green red bell pepper. Add some salt to this and some black pepper according to your own tastes. Saute these until they are soft.
Chop your ginger and garlic into small pieces and pound them into a paste using a pestle and mortar, otherwise known as a kinu in Kenya. Put your eggs in a bowl and beat them together with the minced garlic and ginger.`
Add these beaten eggs to your sauteed onion and green bell pepper. Once the eggs set (turn white) put some of the sesame seeds on top then begin scrambling them.
One they have attained your preferred level of moisture or of readiness, remove them from the heat. I like mine moist, but not too runny. After plating your eggs, garnish them with some of the sesame seeds.
The first tastes your tongue will detect will be those of the red onion and black pepper. As you progress, you shall feel the warmth of the ginger and the mildness of the garlic. The sesame seeds offer a fantastic nuttiness and a much welcome crunch to the soft moist eggs.
There is no better way to begin your day than with this power breakfast.
