Purple Cabbage Apple Salad with Passion Fruit Vinaigrette

We all have those tasks we hate for no reason at all. They have to be done, so we do them reluctantly anyway. For me, I just do not like cutting cabbage. I completely dislike that task. Completely! I would rather clean the house in and out, change the roof by hand, tarmac our roads, build a dam, single handedly launch a satellite into orbit than cut cabbage. I do not know why exactly I do not like cutting cabbage, but I just don’t. Is there anybody out there who is in the same boat as I am? We had this very Konversation on twitter about kitchen tasks you do not like doing and I was glad I was not alone, and also got to learn some of the kitchen tasks that are just not your cup of tea. When I crave a good salad or a slaw, I usually talk myself out of it or very reluctantly cut up my cabbage. I waste time in between every slash, and give myself pep talks and motivational speeches that it will soon be over and be very much worth it. And by the time I was done with my cabbage and eating my salad, it was indeed worth it. I hope you enjoy my purple cabbage apple salad with the best dressing ever: my passion fruit vinaigrette.

Let’s get to it!

PREP TIME: 20 MIN     MAKE TIME: 5 MINUTES         SERVES:2

Salad Ingredients

1 cup of shredded purple cabbage

1 cup of shredded white cabbage

1 apple, finely chipped

1 carrot, grated

1/2 a cup of spring onion, finely chopped

Method

Add all your shredded fruit and veg into a bowl and toss it all up until combined. Das it!!!

I used different kinds of cabbage because the pop of color from the purple cabbage would be a fantastic addition, but nmost importantly because of the fantastic nutritional benefits.

Incase you do not have apples or do not like them, pineapples will do. Just make sure you use a sweet one as a sour one will throw everything off. I originally wanted to use pineapple but someone in the house ate it, so I settled for apple. As for apples, do not use green ones as the sourness will also throw everything off.

You can varry the portions of the veggies used in the salad to suit your personal taste.

A salad can never ever ever be complete without a dressing. We do not have time to eat dry salads, and because of that, we are making a FANTASTIC passion fruit vinaigrette to go with it. Super easy to make too!

Let’s do it!

Passion fruit vinaigrette ingredients

6 sweet passion fruit

A pinch of salt

1/4 teaspoon of black pepper

12 tablespoons of olive oil

6 tablespoons of apple cider vinegar

1/4 teaspoon of mince ginger

1 1/2 tablespoon of honey

1 tablespoon of mustard

 

Method

Add all the ingredients into a jar and shake it for a few seconds until combined uniformely.

From the passion fruit vinaigrette ingredient picture, I had initially started with 5 ingredients. But after tasting it, it was not right; there was no balance. After several adjustments later, I added some ginger, a little bit of honey and some mustard and it was perfect. This way, the acidity of the passion fruit was complimented by the sweetness of the honey. As you make your vinaigrette, taste it before adding it to your salad and adjust as you feel fit. Once you get your perfect mix, you can make it in batches and always have one ready in the fridge.

Drizzle this over your salad and toss until evenly coated.

Serve.

Perfect combination of the sweet and the tart: a bit of softness from the apple, and a bit of crunch form the passion fruit seeds, a bit of herbiness from the spring onion and loads of fruitiness form the apple and the dressing. Easy to make as well. I think this may be the salad that I will be making at least once a fortnight, and probably one that will finally help me overcome my dislike for cutting my cabbage :DD

      Literally EVERYONE LOL!! That is second on my hate-list. I do not doing dishes but at the same time cannot stand clutter in my kitchen. Why is life so hard???

    For me am with u on this cabbage case I’d rather build the Great Wall of China again than cut any greens:spinach,cabbages,kales it’s just sickening buy the tym ur done cooking mood is gone.😕😕😕

      Cutting pineapple used to give me so much stress! But nowadays I do not mind it. Matoke nayo can be so so so so stressful sometimes too!!!! LOL!
