Life. Love. Food

Potato Salad

Among the shows I  am always glued to are cooking shows. Recently I have been watching Pioneer Woman which is quite new on food network. It is one of my favorites these days. The host, Ree Drummond, makes her recipes so easy and do-able and I guess that is why I gravitated towards her since it is the same thing Ii try to achieve with my blog. I liked her warm aura too and her show immediately  from the very first episode. Plus she lives a life that I hope to mirror one day: She is family oriented, she loves to cook and does it damn well, she lives on a ranch (I want to live on a ranch too :)), and she is so graceful.

Todays recipe was inspired by her. She made this pea salad and I decided to put my own twist to her recipe using ingredients I have at hand and ended up with a potato salad. And it was fantastic! Thank you Ree Drummond 🙂

While we enjoy some sunshine before the July iciness, this you have to try this out guys!

My Potato Salad Ingredients

  • 1 can of sweet corn
  • 3 cloves of garlic, minced
  • 1 Tablespoon of black Pepper
  • Tomatoes, diced
  • 1 Tablespoon White Vinegar
  • Salad cream/mayo
  • 4 potatoes, diced
  • 1/2 whole Small Red Onion, Halved And Sliced Very Thin
  • Cheddar cheese/parmesan cheese (optional)
  • 3 Tablespoons Minced Fresh parsely/Coriander

Method

Slice your potatoes and put them to boil together with the garlic. Take them from the heat and dice them into small cubes and allow them to cool down just a little bit. But ensure they are warm so that the potatoes absorb everything really well.

boiling potatoes before making potato salad tenderizes them and adding garlic adds more flavor

dicing potatoes into small cubes makes the salad not only neater but also easy to mix for the potato salad

Rinse your sweet corn and add to the bowl.  Followed by the tomatoes, garlic, black pepper red onion, finely chopped coriander/parsely and the vinegar. Mix everything up.

finely slices onions for the potato salad adds more flavor and makes them a lot less overwhelming or overpowering

adding tomatoes in a potato salad adds alot of freshness to the dish and the sweetcorn balances out the sour vinegar

Add the dressing as much as you prefer  until the potatoes are coated. Gently stir everything until combined. Taste and adjust seasonings as per your preference. Cover with some cling film and refrigerate before serving. This allows the flavors to meld.

Remove from the fridge and stir in some more salad cream to your liking. Sprinkle with more parsley/corinder before serving.

I forgot to add my cheese and only realized when I was eating. But it tasted just as good. This means if you do not have cheese, do not pressure yourself too much. This salad can do without it. But if you have some, do not forget to use it like I did. LOL!

It is light, creamy and full of ingredients that have so much nutrients and go so well together.

    Hi Kaluhi 🙋🏾
I’m making this in 2017, lol!
At what point should I add the cheese if I fancy?

    • kaluhiskitchen

Towards the end or while adding the dressing. No specific point. It is a salad, everything gets mixed in the end
