Nutmeg and Coconut Cream Drop scones

Am I the only one who is always a bit scared of those foods that are dairy/sugar/fat free? I mean, they have removed all the great stuff :D.  However unless it is by medical instruction, I do not think the above mentioned are bad for you, unless taken in excessive quantities.

Today I decided to step out of my comfort zone and attempt one of my favorite breakfast dishes, drop scones, but without dairy. I was pleasantly surprised that the drop scones tasted really really good, if not better. It then made sense to me why dairy-free products are fast gaining popularity across the globe.  I had some left over coconut cream from this dish and I decided to use that in place of my dairy.

If you are allergic to dairy products, or want to try something different like me, read on.

Ingredients.

1 cup of all purpose flour

1 small egg

3 tablespoons of sugar

1/2 a teaspoon of ground nutmeg

100ml of coconut cream

 

Method

Whisk your egg and your sugar together until you they  become pale yellow. To this add your flour and nutmeg and slowly fold this in to the egg mixture. Pour in your coconut cream bit by bit until you get a sticky but very viscous consistency.

Heat your oil and put in your dough. Ensure that your oil is hot enough so that they cook through, but not too hot so that they burn. Also, the oil should not be too cold as they will soak it up, making the scones too soggy.

Once one side is golden brown turn it over and allow the other side to cook too. After they are done remove from heat, allow them to drain on a paper towel then serve.

Because of the coconut cream, these scones smell heavenly. This also goes really well with the warmth of the nutmeg. For those who are changing their lives to dairy free, this is a must try for you. Trust me, if I say it is dairy free but still delicious, it is the truth!
