Ginger Passion Fruit Mojito

I remember posting a throwback pic of my cumin bhajia with tatziki on Instagram and I asked you which drink you would have it with.You all mentioned you preferred drinks and I mentioned that my drink of choice would always be a passion fruit mojito. While many of you were loyal to the drinks they mentioned, some of you also wanted to have the recipe for my mojito, coz let’s be real, even if you have not had it, ginger passion fruit mojito just sounds delicious . And as I promised, today I am sharing with you how I make mine!

With the cold weather behind us and sunny September in it’s full glory (ok, it’s still raining from time to time but that will not stop us from having our mojito, right? RIGHT??), it’s the perfect time to share my best ever drink as today’s recipe- ginger passion fruit mojito!

PREP TIME: 5 MIN    MAKE TIME: 5 MIN    SERVES:2

Ingredients

12 mint leaves, plus additional for garnishing

6 passion fruit

2 tablespoons of honey

1/2 a teaspoon of grated ginger

1/4 teaspoon of thyme

2 limes, juiced

120 ml of white rum

6 ice cubes

60 ml of sparkling water

Method:

Core the passion fruit into a bowl. Muddle the mint leaves, passion fruit seeds, honey, ginger and thyme and lime juice in a mortar and pestle (or use the back of a spoon and a small bowl). I used a bowl since my wooden mortar and pestle would not be best for making a drink.

Make sure your passion fruit are really sweet as if they are bitter and not yet well ripened, this will throw off all the other flavors. I usually wait until my passion fruit is a bit wrinkly as I find those sweeter. I do not know if there is a real explanation to that but that’s just what I have always believed: the wrinklier they are, the sweeter they are {insert heart eye emojis}

I bought my mint form CarreFour at 30bob a bunch (the bunches are quite large!!) and Tuskys stocks them too from time to time. A mojito cannot be a mojito without some limes! You can definitely play around with your flavors and use a variety of fruits, but limes are what will provide the authentic mojito flavor.

Add to shaker along with rum. I always use white rum for my mojito however some people prefer to use dark rum which is still of.

Shake moderately (not too vigorously) and divide between two glasses. Add as much ice as you fancy, I however prefer my drinks with very little or no ice so that the actual flavor is not watered down by the melting ice. Ya feel me?

Top with sparkling water and garnish with extra mint leaves and more passion fruit as much as your lil heart fancies <3.

Easy right? Get ready because this is about to be your favorite drink. It has the perfect balance between the sweet and the tart. You get the aroma of the passion fruit and the rum first before taking your first sip. The notes you will taste first are the sweet ones of the honey and passion and the warm ones of the ginger. The lime lingers all through out and the thyme provides that it factor making the drink overall unique and flavorful!

      what makes a mojoti a mojito is the rum. You may use your vodka, but that will be a cocktail, and something different entirely
