Broccoli and Garlic Penne Stir Fry

I get inspiration for my dishes from an aray of sources. One of them being the cooking shows on food network. My current favorites are Pioneer Woman, Siba’s Table, Trisha’s Southern Kitchen, Food Network Star, Chopped and Grandma’s Cookbook. Do you guys watch these too?? This dish was however inspired by Buddy Valastro of  Kitchen Boss. I like his recipes because they do not take too  long, neither are they too complicated which makes them relatable to me and million others. He likes Italian flavors, as his roots are Italian and incorporates them so well in his cooking.

His recipe used mushroms and macaroni. But I decided to use broccoli and penne pasta. It was outstandingly good. You know those meals you eat so fast because they are so good? This is one of them!

Ingredients

250 g of penne pasta

6 large cloves of garlic, minced

Broccoli

2 diced red onion

1 tablespoon of ground coriander spice

1 teaspoon of white pepper

Salt to taste

 

Method

Chop your broccoli (as much as you want) and steam them. When they are done, set them aside. We got this brocolli from one of our neighbours who had plenty. In true African hospitality, instead of letting it all go to waste, she decided to share with us. However, you can get get broccoli in various mama mboga, food markets and nowadays they are being sold by hawkers on the city streets in the evening. Typical Nairobi :))

Put your penne pasta to boil. After it is done, run it through some cold water then set it aside. This prevents it from sticking together.

Put some oil to heat in a pan. Add the onion and garlic, together with some salt, the coriander powder and the white pepper. Let this saute until the onion is soft.

Add the pasta and mix it all in. After a minute, add the steamed broccoli and mix it in.

bcause the broccoli is already steamed, it will not take that long to cook, hence making this garlic and broccoli penne into a stir fri_kaluhiskitchen.com

Remove from the heat after a minute and serve your glorious penne stir fry.

I have mentioned time and time again that garlic is one of my fave ingredients, and this penne stir fry allows this ingredient to really shine.       I really love broccili. I think i hated them as a result of watching too much dexter’s lab… LOL. But now they are one of my fave. Try this and you will enjoy them :))
